Last of the pyments during the curated flight. They hyped this one up a little. Clear if gummy, still, pale amber pour. Smell is strong white wine essence, bittersharp honey floral, weak spice. Taste is really astringent, sharp & spent wine grapes, really dry & floral, bittersharp leaning bitter with a spent spices. Probably over-attenuated. Medium light body. Really hot. My one dud of the night. Maybe it was just the contrast vs everything else on the table.

Extra pour once I got to know the mazer a little better. Source pour in their garage tap room. September 2024. Not bottled yet. Dark cola, opaque, still. Smells & tastes like aged basamic. Fruity, macerated, condensed, cooked & sticky peaches, botchet honey, grape acidity. Sticky, goopy, runny, thick, warming but no abv on the label yet. Super complex & a real sipper.

Part 3, pyments. Curated flight at the garage bar source. Clear, pale copper, still pour. Strong drizzled honey nose, minor floral, light acidity. Taste is surprisingly pyment focused. Macerated white grape, earthy honey, cream, subtle acid, semi-sweet, no obvious vanilla, toasted caramel needs to be pointed out to me. Runny, lush feel, mellow acid, low heat, no noticeable volatiles. Very refined.

Sampled off the tit at their in-home garage tap room. Clear, still, pale cola pour. Mellow spice, strong floral honey note, alcohol warmth. Thin, pie spice, slightly floral, very mellow but lingering earthy coffee. Slick, not quite lux feel, a little boozy still. Tasty. Should be mellower in bottle.

Round 3: pyments during our in-house tasting. More pyment than metheglin, if barely. The mazers said they'll use more coffee next time, as they thought it came out too mild. Dark, clear, more black than dark grape. Nose has a twing of coffee, stronger generic grape & accompanying acid. Vinous, bittersweet leaning sweet, barely any coffee in the taste. Some mocca sweetness. Thick, lush, warming, all that good stuff otherwise. Great base. Just wanted some definitive coffee.

Pyment section of the walk-through tasting. Pretty dark, clear red vino pour. Sharp, intense dry raspberry & earthy chocolate nose. Thin, super rich raspberry essence, sweet semi-dark chocolate. Lingering. Kinda lux. Warming heat. Very intense flavors but not complex at all. Bought a bottle just because the nose is so good.

Nearing the end of the sweet category our our in-house tasting. Clear, dark, maple color. Wasn't expecting this color. Soft warm ginger nose, lacking more obvious peach. Taste is sweet cooked peaches, really condensed, cooked, really thick & lovely jam with a slight vanilla cookie & warm faint ginger note. Thick, smooth, sweet & acidic, no obvious abv just a bit of warmth. Great.

Second pour, first round of dry bottles at their tap room. In my rush, & constant conversation with one of the owners, I couldn't get the rest of the bottle info. Burgundy, clear, ever slightly paler than the regular raspberry. Dark berry, slightly medicinal, no obvious pepper note on the nose. A bit jammy but very veggy, long acid, low heat, stemmy bitterness, thin. Clear & pale. Just okay. Jalepeno subtracted from a good thing.

Round 1 of pours at their home tasting room. Rich, clear, dark, red-purple, Pinot. Dark berry, light wax, sharp nose. Jammy, clean, fresh tart fruit, lingering acid & honey glaze on the palate. Expectedly thin but still with a slight body. Appropriate heat but still somewhat tamed. Tasty.

Round 2, sweet pours in their homey garage tasting room. 10% now. Cloudy, pale pour. Floral, grassy, medium waxy nose. Semi-sweet, light astringency, medium acid, aged, slight oakiness, honey isn't giving much depth. Not much heat, a touch creamy. Okay. Not as complex or simply as good as their pure Traditional.
