On tap at the source. Pours with a hazed yellow hue with a medium sized white head. Aromas are of mild citrus, hoppy, pine, green, grassy, a bit biscuity. Yeast character is pretty clean with no esters, and a seemingly neutral to slight hoppy balance. Flavors are biscuity, grassy, tangerine, medium dry, lightly bitter, low malty character. Lively bubbles. Dry, nutty, clean yeast.

On tap at White Labs. Pours with a clear pale yellow hued body with a large and strongly lasting white head. Great lace. Aromas are of apple, isoamyl acetate, estery, clove, grainy, phenol, grassy, light alcohol. Flavors are tarter than the first two, some acidity, dry apple, sulfur, pepper, grainy, some bitterness. Bitterness seems a touch tannic. Medium bodied, medium carbonation. A bit grassy on the finish.

On tap at White Labs. The train wreck of the flight. Pours with a clear pale yellow hued body with the lowest head retention of the bunch. Aromas are very sweet, malty, grainy, low phenol, low esters, straw, tea, chamomile. Flavors are super sweet, floral, near cloying. Unfermented wort, nail polish, low chlorine, messy. Not attenuated to a passable level. Sweet, full bodied. Super estery.

Cask pour. Pours with a mostly clear, brown hued body with not much head. Aromas are of hay, nutty, chocolate, fudge, molasses, light roast, minerals and a touch of pepper. Flavors are dry and a touch chalky, cocoa, chocolate, nutty, soil, light salt. Sadly a bit thin and watery on the palate. Not fully conditioned.

I come to White Labs looking to geek out, not necessarily to try good beers, but to try various yeast strains and use it as a learning experience. That said, this is a DAMN good IIPA that I’d gladly drink anywhere in San Diego. Best individual beer that I have had at White Labs (no other yeast based alternatives of this beer were on at the time). Pours with a clear golden hued body with a medium sized white head that lasts. Aromas are of huge tangerine, DMTS, dank, CTZ and Summit if I had to guess. Hoppy, clean, light mineral. Deliciously hoppy aroma.Flavors are grassy, DMTS, tangerine, dank, resin and pungent hops. Medium mineral, dry, light esters. Dry, lively bubbles, medium bodied. Great DIPA!

On tap at White Labs. Slightly disappointed as I was expecting more of the berliner character of this yeast. Pours with a crystal clear fuller golden hued body with a small white head that fades to a ring. Aromas are estery, isoamyl acetate, lightly lactic, clean, grassy, lightly tart. Flavors are very clean with some isoamyl acetate, yeasty, grainy, malty. Good wheat, but not a berliner sadly. Asking about the fermentation schedule and recipe, the lactic acid bacteria apparently didn’t have the time or conditions (for lactobacillus at least, hop and gravity wise) to thrive. Kind of a shame as I like 630 quite a bit more the Wyeast’s Berliner blend (even though I like a lot of Wyeast’s yeast strains over their White Labs counter parts).

On tap at White Labs. Pours with a slightly hazy gold body with a fizzy white ring of head. Flavors are citrusy, peppery, grassy, spicy, almost a light phenol, but I guess that could be hop. Grainy, a touch of mineral. Flavors are clean, bready, biscuit, medium malt, medium-low bitterness. Clean, grassy, dry, bitter balance. Good malt character comes through.
