Hier brouwen we onze eigen lambieken op traditionele wijze en laten deze spontaan vergisten en rijpen op Franse eikenhouten vaten.
Van deze lambieken van verschillende jaargangen vervaardigen we de

Pours a darker, unclear amber. Medium sized, medium low (medium for the style) stability head. Scent is very funky, cheesy (in a good way) , overripe apples, brett, wood. Pretty damn good. Taste is a lot sharper than anticipated. Not overly sour, but clearly sour indeed. Lactic acid and brett take the lead, beneath those (big) parts, there's a lot of smaller intensity things going on, bringing a small part, but a very complex part to the beer. Oak, funk, bitterness, cheesyness, overripe fruits, grassy notes, barnyard, citrus (again, overripe),... The aftertaste is like old, wet wood, damp cellar. Slightly overcarbed to me, and would have prefered a more full body. However, it's a pretty damn good one, again. Lambiekfabriek is really doing a great job as affortable, yet above average beers. keep up the good work !

Aromas are malt, brett, cloves, honey and a hint of caramel. Flavors are similar to nose, moderately tart and dry with the barest hint of fruity sweet in back. Decent body and carbonation. Finish follows flavors.

Bottle 37.5 capped and corked @home poured into a tumbler. Brett nose. Hazy pale amber colour, small fizzy off-white head, diminishing mostly, no lacing. Aroma brett, horseblanket, green apple, barnyard. Taste sweet and sour, green apples, unripe goose berries, brett, tart, woody notes, some vinegar. Medium body, gentle sparkling mouthfeel, soft carbonation, dry sweet and sour aftertaste, citrus notes, well-balanced, easy geuze, very good. Perfect instapmodel.

Clear orange red beer, small creamy white head, unstable, non adhesive. Aroma: nice, clean lambic smell, sourish impression, a hint of strawberries indeed. MF: ok carbon, medium body. Taste: sourish start, nice, clean acidity, brett, lemony, some strawberries, pleasant fruited lambic! Aftertaste: lemony, fruity, some strawberries, pleasant, funky, a bit peppery, nice one!

F: thin, white, quick gone.
C: pale gold, light on the beginning and more hazy at the end of the bottle.
A: woody, gooseberries, grapes, peach, funky, barnyard, citrus.
T: nice sour fruity, brett, citrus, lemon, gooseberries, peach, leather, woody, nice puckering effect, medium carbonation, very good as I expected, fully enjoyed.

Bottle. Color: Hazy golden, white head. Aroma: Stable-like funk, fruity grape. Taste: Rural and stable-like funk. Hints of leather. Fruity grape, grapeskin, tart (barely ripe) orange, some lemon. Dry mouthfeel. Medium tartness. Some straw. Hints of minerals. Medium body, just below average carbonation.

Aromas are caramel, green apples and grapes, brett. Flavors are somewhat similar to but not as good as knows. Mildly tart and dry, loses the caramel. Decent but kind of generic in a Belgian fashion.
