Hier brouwen we onze eigen lambieken op traditionele wijze en laten deze spontaan vergisten en rijpen op Franse eikenhouten vaten.

Sample (thanks fonefan!). Hazy orangeish golden colour with a small white head. Aroma is floral, very tart wooden with some mild spicy elements. Flavour is tart wood, some fruits, mild floral tones with some earthy and herbal tones.

Bottled (thanks BTR/Euphemos). Golden colour, small white head. Aroma is tart brett, some berries, wood and herbal tones. Flavour is quite dry, not very sour nor tart, but still lovely bretty dry with some mild fruits.

75cl bottle from Prik & Tik Dranken Marlou. F: medium, white pink, quick gone. C: dark ruby red, hazy. A: woody, plums, blueberries, barnyard touch, bit herbal. T: medium to full malty base, red berries, grapes, blackcurrants, woody, bit herbal, nice juicy aspect, green tea, funky, almost medium carbonation, very nice, not so sour, refreshing, enjoyed.

Bottled 01 20. Pours clear, quite pale yellow, nice looking fluffy head. Smells citrussy, light, bit of cheesyness. Nice and light body, slight acidity, tad watery. Taste is dry, somewhat sour, lots of citrus. Medium funk, bit of wood, not much grape.

330ml bottle with travlr at Bottle & Board, Peterborough. Bright gold, a little hazy, foamy white head, lots of lacing. Waxy aroma, sour berry flesh, lemon zest. Sweeter than most lambics, with a gentle tartness halfway through going to the finish. It has a light body, soft to medium carbonation. Delicious from start to finish.

Lambic with muscat grapes, one of the latest additions to Lambiek Fabriek’s range; bottle shared with my girlfriend. Medium sized, moussy, dense, off-white, opening head retaining well around the edges, initially clear deep vermillion robe with coppery glow, hazy further on. Aroma of oak wood (very prominent) and grape seeds, fried tomato peel, red plum, sandpaper, rosehip tea, bergamot even, cassis, tree leaves, glazed beetroot, hay, hints of ‘freshly fermented farmland’ here and there. Tart onset, very fruit-juicy with very prominent homemade grape juice effect, paired with flavours reminiscent of apple juice, cassis and persimmon; very effervescent, spritzy, almost lemonade-like carbonation with lots of minerality to it. Yoghurty lactic dryness in the middle, bready underbuilt, but this ‘bottled and carbonized’ grape juice or grape lemonade effect continues, with added grape skin and grape seed tannins in the finish, where strong herbal elements of dark green tea, rosehip, bergamot and moss emerge too. Woody and earthy aspects join in, but both the herbaceousness and the grape juice effects remain dominant, the latter even adding a bit of sweetness to a softly tart main flavour. Very unusual for a grape lambic: much less vinous than I am used to, as if indeed bottled grape juice from a can was used and the grapes were not really fermented in the lambic, and adding totally unexpected cassis and rosehip flavours. In spite of this odd character, however, I did find it refreshing, fascinating and tasty, even if it took a while to get used to it – I am only wondering how this one will evolve over time…
