Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Bottle at home. Pours deep ruby brown, nose is raspberry jam, coconut, vanilla, caramel, fig, taste is similar, juicy fruit, sweet, lots of barrel, but not too boozy. 8/9/9/8/8

33cl bottle. Poured a cola brown color with a small white head. Aroma was almond, marzipan, toffee, caramel. Flavor had some barrel, but not overpowering. Sweet roast, malt, almond, vanilla.

Roast and big barrel. Chocolate and sugar crystals. Pours murky black without much head or lacing. Sweet but pretty good. Bottle.

33cl bottle pours a thin brown, a ring of white head, long legs. Nose has plenty of barrel and plenty of malt, lots of marzipan, booze. Plenty of booze. Toffee and marzipan, booze, malt, Witchhazel, maple and birch. Full, long finish. A little hot too.

16oz can. Poured a very cloudy yellow color with a medium sized white head. Aroma was big tropical fruit, grapefruit. Tangerine, some hop leaf burn. Slight creamy character in this one.

16oz can pours pulp. Big pineapple, nice citrus, herbs, straw, some oats. Flavor has tropicals, grapefruit, straw and herbs. Finishes with some hop burn. Medium full.

Lovely Willett character right off the bat. Though it's not maybe as elegant as some of their Willett stuff. There's a LOT of raisin and plum and caramel inserting itself in there. Still, hard to be too mad. I'm not getting any alcohol at all. Spirit character dries the very end nicely.
Soft, rich, malty, but not too sweet and with a lovely, warming whiskey character that tickles the throat and dries things nicely. Warming from alcohol is certainly felt, inevitably, but there's nothing hot/sharp/apparent. Dates and caramel galore with vanilla lingering alongside peppery Willett and light tannin. Weird that Chris and Tom and TJ had such a different experience than the bottle I'm currently loving. While not among their very best, this is still top tier Barreled Souls in my book. Tons of rich barrel character and a rich, malty texture but not too sweet.

On tap at Barreled Souls, pours a dark red with a small white head. Aroma is full of sugary graham cracker, vanilla, and berry puree. Flavour is basically a bullshit fruited kettle sour, with artificial graham cracker, vanilla extract, and berry puree. Nonsense.

On tap at Barreled Souls, pours a hazy orange with a small white head. Aroma is sweet and candied, with candied peaches, some sugary berries, and gentle salinity. Flavour is more like a generic sweet fruited kettle sour, with candied peaches, sugar, and some salinity. Not gose-like, nor refined at all. Lame.
