Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.
The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Black with a dark head that fizzles off quickly. Molasses, oak, whiskey, vanilla, toasted bread, soy, umami, and light sweetness tying everything together. The body was a tad thinner than expected but still medium-thick. Finish has loads of booze and is quite hot. Lovely beer but the alcohol overpowers it quite a bit. Would really benefit by being a couple points lower to let the rest of the beer shine.

(On tap) Black with small tan head. Amazing aroma of bourbon and cocoa. Full bodied, smooth, slightly sticky with fine carbonation. Taste of toffee, red wine, bourbon and nice alcohol in finish. Excellent.
Sweet, heavy and syrupy with some marshmallows, barrel, vanilla, cocoa and wheaty bourbon.

330 ml bottle, # 421 / 600. Aroma is nice natural raspberries with a hint of lactic funk. Flavor has a nice amount of acid and oak to balance the jammy berries. Lightly tart, lightly sour, and mildly acidic. Pretty good.

Bottle with membership group at OT Camp tasting. Pale brown with red hues, no head, no lacing. Aroma is strong sweet-tart raspberries, undercurrent of almost a graham cracker/cheesecake crust. Taste mirrors aroma. Smooth, somewhat watery texture, soft carbonation, finish as taste.

Clear raspberry. Small, pinkish head quickly to edge.
Raspberry is bitchin. That's juicy and authentic. Some big acidity in the background. Kind of lactic with maybe a touch of acetic. Light oak.
Rich and syrupy with rich raspberry juice and pepper. Lactic acid is tasteful there's mild oak character. Not too sour. Love the big body and soft textures. Fruit steals the show. Weird how different all the wild styles are.

Gold pour. Thin foam. Orange, vanilla, and hint of blackberry. Light bodied and light carbonation

Tart orange, blueberry nose, faint vanilla. Clear copper, headless. Tart orange, vague berry. Light body, easy carbonation. Too subtle, didn't deliver on the blueberry or vanilla.
