Description
Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Bottle with membership group. Opaque dark brown, nice viscosity, ring of head. Aroma is earthy malt, light smoke, subtle rye and tequila. Taste is earthy, smoky malt, rye a little higher in the mix, tequila still pretty restrained. Smooth texture, soft carbonation, finish as taste with huge alcohol warmth in the esophagus (a bit much) and a smidge in the nose, but no other sign of alcohol. Was dreading a tequila bomb (not my favorite) but they did a nice job of using it as a highlight.

500 ml bottle from our membership. # 67/720. Aroma is mild tequila, roasted malt. Mils smoke. Flavor follow. Templeton rye up front roasted malted backbone. Very mild smoky finish. Alcohol is yet again masked. Really nice!

Smell-weak malt, hops, bitter tones, faint caramel, faint yeast.
Foam-thin, malt, alcohol, warming, bitter tones. Head is large, light brown in color. Sticks.
Appearance- somewhat nice can, simple, but I like it. Clear dark red-brown color.Some active carbonation.

Taste - weak malt, hops, bitter tones, some caramel, faint sweetness, and alcohol warmth. Bit boozy, not bad, but would not seek again.

Oh yeah...that's gonna work out well...rich, rich malts full of toffee and caramel, are balanced by an equally rich, round, not too oaky bourbon. Tons of cherry-vanilla character. No alcohol, of course.
Pineapple and wood tannin leading into cherry, vanilla, big toffee and round, moderately spicy bourbon with a strong, woody, but not too tannic/acidic oakiness. So rich and yet drying out nicely on the end. No oxidation or really any negative sign of age. Like drinking a glass of juice.

Bottle. Color: Dark ruby, very thin beige head. Aroma: Malty, Bourbon. Taste: Full body, low carbonation. Malty, spicy notes, nuts, almond, caramel fudge, hints of dark fruit. Hoppy background. Over moderate to medium sweet, moderate to over moderate bitterness. Nice slow sipper.

Full body, light carbonation. tastes cinnamon, spices, some sweetness, vanilla, nutty, . finishes lightly sweet with notes of spices, vanilla and nutty notes. On the sweet side, but overall good balance, nice notes of cinnamon and nuts

Rich bourbon is exactly what you want. Spicy, deep, expansive, but not utterly dominating, leaving enough room for the chocolatey-fudgey malts. Bit of crusty, crunchy, minimally roasty earthiness, wood and mild fruitiness (cherry-vanilla-like). Kind of does one hell of an approximation of BCBS. No alcohol noted. Very aromatic and inviting.
Big chocolate-fudge-brownie-like character. Rich, malty, chewy with just an ever-so-slight hint of pleasing syrupiness. Excellent, rich, deep, spicy bourbon character to balance. Neither too much sugar nor alcohol and it's not overly roasty, nor is it dominated by the bourbon. I agree with Tom that it isn't the most complex thing, but I don't think it's trying to be. Just a classic (THE Classic) bourbon and stout package to make you nostalgic for the one and only BCBS. An incredibly masterfully-done homage.

Not your typical barley wine. Quite sweet, floral, malty and stingy with woody oakiness, spices, hints of apple brandy, vinous gin?, syrup, toffee and caramel, some prunes and figs, liqueur notes. A bit weird but somehow it still works surprisingly well.
