Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.
Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.
The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Can from trade with ClarkVV--thanks, Clark! Cloudy, almost a pale apple cider, tons of sparkle (Alka seltzer speed), no head, trace lacing. Aroma is strong tequila, orange and pomegranate with an almost rum quality. Taste follows aroma with salinity. Smooth, frothy texture, average carbonation, finish as taste. Pretty representative of the drink. Well crafted.

Bottle pour with membership group--minus ClarkVV--miss you buddy! Clear dark brown/mahogany with light viscosity, no head or lacing. Aroma is caramel, mild red wine, strong oak, smokey. Taste is caramel, red wine, oak, light smoke. Smooth, fairly thin texture, finish as taste.

500 ml bottle. 2024 vintage. Bottle # 1150 / 1200. Clear brown liquid. Aroma is ale yeast, toffee, raisins. Flavor is musty, malty, soft hints of fortified red wine. Mild oak character. Pretty well balanced.

500 ml bottle. 2024 vintage. 400/720. Aroma of malted wheat, toffee, caramelized sugar. Flavor follows. ABV is hidden. Seems like a lot of sugar but…. I don’t drink a ton of standard barley wines anymore.

Bottle pour with membership group --minus Clark--miss you buddy! Hazy maple syrup brown, thin cap of head with poor retention, light viscosity and no lacing. Aroma is strong caramel, earthy malt, pencil eraser, wheat. Taste is strong brown sugar, caramel, raisin. Smooth texture, soft carbonation and finish as taste. We drink so many barrel-aged barleywines or adjuncted that it's hard to remember what a straight barleywine is supposed to taste like. Good.

500 ml bottle, thank you TJ. Aroma is soft bourbon, roasted malt, chocolate. The Willet shows a mellow character but shows throughout. Plenty of chocolate, shows no alcohol. Great body and texture. Wonderful stout.

Bottle (11/4/24) shared with membership group - Clark: we miss you buddy! Opaque black, ring of head, nice viscosity, light lacing. Aroma is strong earthy malt, cacao nibs, bourbon, grain. Taste is well balanced, strong earthy malt, bourbon, super mellow. Smooth, velvety texture, soft carbonation, finish as taste. Not the most complex thing in the world but exceptionally executed!
