About
Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

On tap at Barreled Souls, pours a hazy golden with a small white head. Aroma has a strange musty character and rotting melons. Flavour is similarly unpleasant, with rotting vegetables, garbage and light citrus. This is seriously wrong and shouldn't be sold.

Quaker State - Cognac from Barreled Souls Brewing Company

On tap at Barreled Souls, pours a deep dark brown with a small beige head. Aroma brings out loads of cognac barrels, with just a trace of the base beer still detectable. Flavour is along the same lines, with plenty of cognac barrels, oats and earthy coffee. Hearty still, but now more characterized by the barrels. Good.

On tap at Barreled Souls, pours a deep dark brown with a small beige head. Aroma brings out hearty oats, medium roast and light earthy bitterness. Flavour is along the same lines, with hearty oats, light espresso and some earthiness. Hearty and nicely designed. Very good.

On tap at Barreled Souls, pours a cloudy yellow with a small white head. Aroma brings out soft piney hops, with biscuity malt and a touch of herbal dankness. Flavour is along the same lines, with dry piney hops and biscuity malt. Dry and smooth on the palate. Nicely made.

On tap at Barreled Souls, pours a cloudy blonde with a small white head. Aroma brings out moderate dank hops and dry biscuity malt. Flavour is quite dry, with bone dry herbal, earthy hops and a soft biscuity malt base. Decently balanced, but quite dry and bitter. Decent.

On tap at Barreled Souls, pours a clear copper with a small white head. Aroma brings out light toffee, bready malt and caramel. Flavour is along the same lines, with bready malt and a touch of toasted caramel. Clean and easy. Meh.
