Description
Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Bottle shared with membership group (minus Clark--miss you buddy!). Maple syrup brown, light sparkle, nice viscosity, ring of head, no lacing. Aroma is strong, mellow caramel, spicy rye, dark fruit (as it warms). Taste is strong, spicy rye, caramel, hint of dark fruit. Smooth, silky texture, average carbonation and finish as taste. Great complexity and balance in aroma. Taste is slightly biased by the rye but still quite good.

500 ml bottle. # 184 /720. Aroma is mild Russell Reserve bourbon, caramel, burnt sugar. The medium body shows plenty of dark fruit, soft vanilla from oak, mild sweet caramel finish. This shows a bold caramel/ toffee malt character. Good but not as great as others in the stlye from this brewery.

Taste is strong bourbon, caramel, hints of dark fruit and spice. Smooth, frothy texture, soft carbonation, mild alcohol heat (dissipates as it warms), finish as taste. Good but a bit to the sweet side.

500 ml bottle. # 708/720. Aroma is substantial caramel malt, raisins, soft tequila. Flavor as decadent malt with just a hint of agave and mild rye bourbon in the finish. Medium body with a lightly balanced between the barrels.

Bottle shared with membership group (minus Clark--miss you buddy!). Very dark cola brown, light viscosity, thin head fading to a ring, no lacing. Aroma is strong earthy malt, caramel/toffee, rye. Taste follows aroma along with late tequila and hint of lime. Smooth, silky texture, soft carbonation and finish as taste. Approached this with trepidation as not the biggest fan of tequila but it is restrained and nice contribution to taste.

Can: Poured a murked orange with a creamy off white head. Aroma is gin, orange, citrus, lime. Taste is gin, citrus, lime, bitters, orange.

Can: Poured a dark coppery to reddish orange, Head was off white but dissipated fast into whispers across the top. Aroma is pungent, berry, cherry. Taste is tangy, berry, cherry, light grain, vanilla balances out the tartness.

Draught @ Væskebalancen Bar, Aarhus. Pours black no head. Aroma of roasted malt, caramel, coffee, vanilla, bourbon. Flavor is sweet, roast malt, caramel, chocolate, coffee, vanilla, bourbon. Full body, oily mouthfeel, soft carbonation, sweet finish with warming alcohol. 200426

Tap @ Væskebalancen Bar, Aarhus. Black with a small beige head. Aroma is sweet, malty, roasted malt, coffee, light soy, vanilla and bourbon. Flavor is very sweet and moderate bitter. Sweet and moderate bitter finish with lots of warming alcohol. Oily and soft. 200426

Bottle from Brew Export. Enticing aromas of bonfire toffee, sultanas, apple strudel, bourbon, nuts. Rich warming & soothing flavours of the above, some jammy dark fruits. Boozy sweet warming & exceedingly satisfying. Next level stuff.
