Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.
Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.
The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800βs. The benefits of this system are really three-fold.

Pours nearly black over brown, tanned head. Smell is rather weak, roasty, no real apples here. Taste is sharp, roasty, apples are hidden - if any - , some chocolate, almost tonka-like to me. Full body, lower carbo.

Black with a tan head. Aroma of oak, booze, bourbon, vanilla, coffee, milk chocolate and caramel. Flavour is moderate to heavy sweet and moderate bitter. Medium bodied with soft carbonation.

500 ml bottle shared with Chalumeaux, thanks TJ! Bottle number 260/500, dated 10/5/2018. Aroma is stern bourbon, chocolate, rye. Flavor is pretty nice, bold bourbon throughout the sip, chocolate and rye nuances. ABV is not hidden. Honestly, could have sat a bit longer but... no way to know that ahead of time. A sipper no doubt!

1.5L magnum, pours an opaque dark mahogany with a small tan head. Aroma is extremely woody, with lots of bourbon barrels, lots of wood, alcohol, and caramel. Flavour is brutal, with lots of wood, alcohol, bourbon barrels and toasted caramel. Extremely intense and brutal. A little over the top.

Taster on Black Christmas #7. Magnum #13/50. Appearance: hazy copper with a tan head. Aroma: sweet, caramel, some barrel. Taste: along the same lines, a bit oxydized. Overall: pretty good.

Very Hazy amber beer, small pale tan head. Lovely bourbon coconut nose, some wood in there as well. Smooth palate, semi dry and with decent fine carbonation. A little bitterish caramel malts, touch of creamy malts. Lovely coconutty bourbon with a decent side helping of dank wood. A mild lemon marmalade vibe is left over from the Sorachi and Lemondrop hope in the base beer. Smooth and dry finish. Full on and flavoursome ba barleywine.

Barleywine with cherries and vanilla. Pretty boozy. Tastes like a proper pastry barleywine. Nicely cherry, in a candy bonbon sort of way, bunch of vanilla, pretty sweet. Reminds me of the inside of a cherry bonbon. With vanilla. Love it.

Big marshmallow bomb. Lactosey sweetness, tons of vanilla. Creamy, smooth and oversweet. Bunch of sticky chocolate flavours, light vanilla, and quite some biscuity stuff. All the 'smore flavours accounted for. Not a fan, but done well.
