Description
Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Magnum bottle "with elderflower". Pours a hazy copper with no head. The aroma is pure sugar, caramel, oak, floral. Medium body, brown sugar, oak, boozy, good.

500 ml bottle purchased at the brewery. Bottle date of 8/23/16. Bottle number 334 / 800 at an ABV of 11.5. Mocha head died pretty slowly, with light lacing down the chalice. Aroma is substantial bourbon on top of thick milk chocolate, vanilla, and marshmallow notes.

The bourbon is strong and alive. The bourbon may cut into the flavor as far as overpowering the other elements of the stout. Just a few more months of age would do wonders for this. That said the chocolate, spice, and bourbon is really nice. This exceeded my expectation. Poured from bottle thanks Chris dated 8/23/16 bottle 334 of 800 black pour with nice lacing and creamy mocha head. Aromas of bourbon vanilla roasted malt chocolate. Taste is delicious somewhat hot whiskey forward vanilla chocolate. Really could use a few more months of aging and it would he amazing. Poured from bottle thanks Airforcehops 8/24/16 200 of 300 dark black pour with a nice creamy mocha head. Aromas of chocolate marshmallow honey roasted malt. Taste is creamy chocolate coffee vanilla super mouthfeel. Well done.

500 ml bottle purchased at the brewery. Bottle date of 8/24/16. Bottle number 200/300 at an ABV of 10.6. Color is a pitch black ravens feather with slow dying tan head. Aroma is nice, deep milk chocolate, light roast and a hint old spice.

The mouthfeel is proper for the style, nice and full with a smoothness on the texture. The texture is wonderful. The flavor is nice, great chocolate element!

32 oz. pill growler filled at the brewery on 7 October. Hazy yellow color, frothy white head. Aroma is subtle white grape, mild hay, soft florals.

The flavor is again subtle. White grapes, light citrus, floral notes, and a mild pale grain backbone. Body is light with a crisp aftertaste. Texture is real thin but the flavor is nice.
