Description
Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Bottle #601/ 720. Aroma shows bolder vanilla, light oak, melted caramel. The flavor shows strong vanilla with maybe a note of almond hiding in there. The adjuncts do tome down the barrel quite a bit. Sweet but not cloying. Another really well made Barreled Souls brew.

Bottle shared with membership group. Inky black with nice viscosity, no head or lacing. Aroma is peaty malt, vanilla, almond, caramel, bourbon. Taste is strong caramel, vanilla, toffee, bourbon, hint of dark fruit. Medium body, moderately thick texture, soft carbonation, some alcohol heat (mellows as it sits). Not getting as much bourbon as straight Tonka. Starts a bit muddled but comes together better as it sits. A bit sweet.

Dark, clear. Garnet highlights. Little/no head.
I get the nuts in the nose, surprisingly, but not very much vanilla. Some pastryish flavors from the salted caramel. Again, the barrel is hard to find in the nose. Prominent caramel-toffee. No alcohol noted.
BIG vanilla, whew. Did NOT skimp on that. It tastes great, but it's not exactly subtley done. Barrel has the fun drying spices with the clove, dry toffee, cream and the almond and salted caramel don't hurt either. No alcohol, with a nice texture and no big syrup or excessive sugar. Like the other, a bit on the sweeter side, but not too much so.

Dark, clear. Dark chestnut hues. Very little head.
Sweet, rich fudge and light dark chocolate interludes with rich caramel. Not very spicy at all, but some round sweetness. Extremely approachable and not overly barrel-y in the nose. Certainly mild and very malt-focused. No alcohol noted.
Tangy almost, in the mouth, with cream, toffee, clove, vanilla. Ok, I guess that's the OE wheated bourbon. Very different than your average bourbon. Makes for a super unique flavor, though sadly it doesn't translate to the aroma very much. Some classic cherry on the very end, with an undercurrent of zesty acidity. Soft caramel and creamy marshmallow-fudge. Despite the clovey-zesty-vanilla acidity, it's still tending a bit sweeter than I'd prefer, but not by a huge margin. No alcohol noted.

Bottle shared with membership group. Inky black with nice viscosity, no head or lacing. Aroma is strong bourbon (mellows as it sits), hint of dark fruit; toffee/malt emerge as it sits. Taste is strong mix of toffee, bourbon, light peaty malt and hint of dark fruit. Soft carbonation, silky texture, initial blast of alcohol heat but mellows as it sits. Very nice, particularly after allowed to sit a bit.

Bottle. #243/720. Flavor is attributed to the bourbon. Oak, coconut, mild spice. The flavor has mild sweet bourbon that is mildly oaky. Hints of caramel, vanilla, and soft rye. Warming after the sip. Alcohol doesn’t burn. Body is lean but the flavor is very nice.
