Description
Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Bottle shared with membership group. Opaque, inky black, light viscosity, no head or lacing. Aroma is strong chocolate, nut, oak, light banana, and choconut. Taste is subtle banana, bourbon, light coconut. Spicy finish as taste, finish as taste.

Bottle. #621/1020. Aroma is a great mix of banana and spice that gives a “banana bread” essence. Flavor still shows a strong amount of Willett and banana. Willett is of course spicy. Alcohol shows light in the finish. I like it but again the Willett spice dominate.

Dark, not much head, probably clear.
I'm getting soft, rich vanilla. Maybe an afterthought of banana and light bourbon. What a trip. Not intense Willett? Not a noseful of banana? Not boozey. Does gain fruity banana as it warms, but it's tempered.
Soft, fruity, juicy, spicy with Willett adding spice and sweetness. Lots of vanilla with tasteful banana. Light chocolate, hint of ash and lingering acidity. Banana seems to lighten the body somewhat, but it's still soft and deep enough. No alcohol. Interesting and really well-done. More of a vanilla stout with a banana afterthought, but that's fine with me.

Bottle shared by membership group. Opaque, inky black with nice viscosity, no head or lacing. Aroma is earthy, oaky, spicy bourbon, toffee, cherry vanilla. Taste is spicy bourbon and dark fruit over base malt. Full bodied, thick texture, soft carbonation, no sign of alcohol. Spicy Willett dominates but not necessarily a bad thing.

Bottle. 16/460. Aroma is bold spicy Willet bourbon. Maybe some chocolate but it’s a fuck ton of Willet. Barreled Souls went crazy on Willet two years ago. I don’t think Willet is my preference. Just MHO.

Dark, inky, viscous pour. Very little head.
Yeah, smells like Willett. Big, bold, spicy, dry, lots of lead. Turns in to big cherry-vanilla on the very end. No roast in the flavor, no alcohol somehow, not even that strong-smelling. Dark chocolate character balances gently. That choco-cherry-vanilla combo on the end is insane.
Rich, rich, intense bourbon with big spice and lead. So much going on, so complex and so intensely-flavorful. Cherry vanilla lightens the mood with rich chocolate and light caramel. I like that it's minimally fudgey and takes things a different direction - more earthy, dark chocolatey. The Willett is next to none. The fact that it's not boozey or even overly heavy. The WIllett both intensifies but lightens things.
