Description
Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Bottle shared with the membership group. Maple syrup brown, fine particulate mist, light viscosity. Aroma is well-balanced strong caramel, lightly spicy bourbon. Taste is strong, well-balanced caramel and spicy bourbon. Smooth texture, soft carbonation, finish as taste.

Aroma is dark fruit, apple, English toffee. Flavor is ridiculously smooth. Toffee, caramel, bourbon and vanilla from bourbon are married together perfectly. WOW!!

330 ml bottle, #14/432. We did the entire Big Bang Willetts together.,Warm melted caramel and English toffee on the nose. The Willet is slightly more spicy than the 4 year. Nice dry oak. Still incredibly balanced with the malts. REAL good !

330 ml bottle, #345/432 .. We did the entire Big Bang Willetts together. Aroma has plenty of Willet bourbon. The flavor has a nice amount of toffee and caramel to help balance the spicy Willett. Body and texture are smooth and medium plus.

Clear chestnut. Small, dark beige head to partial cover.
Man, they just keep getting better...more tea, fruit and now a soft, intense, rich, vanilla-toffee. Very little spice here! Soft caramel-toffee, lots of fruity yeast and fruity whiskey. No alcohol!
Light spice and lots of tea with soft vanilla and a bit of a dearth of body. Maybe a touch of oxidation on this one? Definitely lighter-bodied, noticeably-so, than the previous, though it didn't really affect the nose. No alcohol noted, no sugar. Just an ever-so-slight metallic note, perhaps? Or more of an earthy, iron-like note, perhaps.

Deep chestnut-amber, clear. Small, beige head quickly to ring.
More intense aromatics but it's not too strong or too spicy. Less spicy than the six but stronger fruitiness and bourbon intensity. More vanilla, more sweetness. Still that round, elegant, balanced character with no alcohol noted.
Juicy orange and tea with rose water and soft spice. Fruity and nicely-attenuated caramel. Dry toffee and rich vanilla but all just so tasteful, balanced, easygoing and lovely. My goodness!

Bottle shared with membership group. Maple syrup brown with nice viscosity. Aroma is strong caramel with assertive spicy bourbon, toast. Taste is strong, spicy rye bourbon over caramel. Soft carbonation, hint of alcohol and heat, finish as taste. Bourbon is more assertive here than 4-year across the board.

Clear, medium chestnut-amber. Small, dark beige head.
Spicier than the 4, but still nice and tasteful. Medium and dark fruits with toffee and vanilla. Bright and fruity, so well-rounded and balanced!
Soft caramel-apple with beautiful black pepper, tea leaves and light vanilla. Rich and moderately intense. Just a step up from the 4 year. Excellent attenuation and clarity of flavor with just a fantastic barrel expression. No alcohol or aggression ever.
