Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.
Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.
The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800βs. The benefits of this system are really three-fold.

Clear, bright marigold-honey. Small, off-white head quickly to edge.
Bright nose of moderate lactic and light acetic acid with fresh peach skin and good fruit juice and acidity. Not really getting any lambic-like character, but it's billed as an American Wild Ale and as such it seems to live up to that. Certainly nothing off here.
In the mouth, it's much more tart and has more fruit and body than the previous two we tried (Blueberry and Strawberry). Those just tasted like semi-bland wheat beers with a bit of fruit. Bit of acetic, but mostly lactic and fruit acids with a healthy amount of authentic peach flavor.

500 ml bottle. From our membership. 383/600. Aroma is funky peach, mild lactic acid. Flavor has the fuzzy peach with a good amount of sharp acid. Pretty good for a fruited sour and not in The typical Barreled Souls, wheelhouse

Bottle pour w/membership group. Cloudy, bright yellow w/ring of head & no lacing. Aroma is strong tart fruit. Taste is strongly sweet/tart stone fruit. Smooth texture, soft carbonation, finish as taste. More tart than I'd like.

Bottle pour with membership group. Murky dark brown with ring of head, trace lacing. Aroma is strong caramel, fruit, vanilla, brown sugar. Taste is strong caramel, vanilla, brown sugar, mild nut. Smooth, creamy texture, soft carbonation, no alcohol, finish as taste. Very nice.

Not as much raw sugar, wow! Pecan sweetness and rich nuttiness. Very English, very fruity.
Fruity, juicy, rich and with excellent, spicy vanilla. Chewy pecan, chewy caramel, fruity. Very sweet but not as unbalanced as some.

Bottle from share with membership group. Opaque black with nice viscosity, ring of head, no lacing. Aroma is base stout, milder nuts, coconut, chocolate. Taste is strong coconut, hint of nut and chocolate. Smooth texture, soft carbonation, no alcohol, finish as taste. The coconut cuts the sweetness and no sign of alcohol.

500 ml bottle. From our membership. 38/1340. Aroma is chocolate syrup, coconut, pecan. Good texture and mouthfeel. It is like a Dessert non baked bar. A touch sweet but it is a dessert stout.

More sugar, unrefined, unaged, unfermented. Per BS BA beers. Has some nice coconut I suppose. Light roast, not overdone. No alcohol.

500 ml bottle. 189/840. Aroma is caramel and peanuts without a doubt. The flavor has caramel, toffee, peanut. The acid in the finish helps balance the sweetness. Good mouthfeel and texture.
