About
Barreled Souls Brewing Co. is owned and operated by Chris Schofield and Matthew Mills. Chris and Matt both grew up in Wells, ME and have been friends since the fourth grade. The idea of opening a brewery together came up many times over the years, usually while imbibing on some stellar examples of the craft. The conversation got serious in the summer of 2012 and two years later Barreled Souls was open for business.

Matt and Chris set out to create the kind of beers they would want to drink and the kind of brewery they would want to spend time at. This meant focusing on making a large variety of beers, using unique ingredients and processes paired with a large, comfortable and professionally run tasting room that carries 12 varieties on draft.

The brewery operates a fifty gallon brewing system. All of the beer produced at the brewery undergoes primary fermentation in oak barrels. The fermentation system is based off of the Burton Union system, which was a method of fermenting beer developed in England in the 1800’s. The benefits of this system are really three-fold.

Bottle. Color: Almost black, thin beige head. Aroma: Dark fruit, raisins, Bourbon. Taste: Well balanced mix of caramel malt, dark fruit, notes of raisins, Bourbon, hints of roasted malt. Boozy notes, caramel fudge, warming mouthfeel. Full body, below average carbonation. Over medium sweet, moderate bitterness. Very nice.

From tap at BeerTemple, Amsterdam. Aroma is quite heavy on the bourbon with roasted malt, coffee, vanilla, and loads more bourbon. Mild sweet flavour, roasty bitterness, some booze. Medium body. Unbalanced, but nice.

From tap at BeerTemple, Amsterdam. Like the coffee variant the aroma is quite heavy on the bourbon, with vanilla, roast, and only light hazelnut. Moderate sweet flavour, roasty bitter, bit boozy. Body is medium. I'd hoped for more hazelnut.

From tap at BeerTemple, Amsterdam. Aroma is thick sweet maple syrup pancake with blueberries and notes of caramel. Very sweet and sugary, massive sweetness. Body is above medium. Fun 'dessert beer', though a small glass is enough.

Can from Greg & Jane's Beer and Wine. Opaque black with thin head, fair retention and no lacing. Aroma is strong roasted malt and vague nuts. Taste is earthy roasted malt (vaguely tart), late hint of coffee. Smooth, creamy texture, medium bodied, soft carbonation and finish as taste. Don't love the earthy tartness.
