Admin Note: Formerly known as Wunderkammer Bier and brewed at Hill Farmstead where Vasilios Gletsos was a brewer until January 2020. As his noncompete clause is winding down he has rebranded as Wunderkammer Biermanufaktur. The beer is brewed at a former Vermont dairy barn that has been repurposed.

Bottle @Luppolo Station (Rome). Dorata, abbastanza limpida, schiuma bianca media. Al naso note vinose, di lieviti selvatici, balsamiche. In bocca è acida vinosa, complessa, rotonda, molto bilanciata. Corpo medio, carbonazione media. Ottima.

Bottled Feb 2023, drunk 11/26/23. Clear violet-blueberry. Small, pinkish head. Nose is a lot of currant and light blueberry spice. Juicy, tart, aromatic, clean. Soft, rustic grains to balance the acidity. Very bright overall. Soft, malty, juicy, huge blueberry character. A bit lighter-bodied than usual, at least compared to the fir and yarrow beers. Vanilla, pepper, sweet blueberry juice and minimal bacterial influence. Fruit is excellent, but I wouldn't hate a bit more beer character.

500 mL bottled August 2022. Drunk 11/25/23. Brass, bronze. Clear, small, white head slowly to ring. Well another nutty nose. Maybe a shade less intense and perfect than the fir but still phenomenally well expressed. Sage, lavender, pepper, all sorts of herbal and earthy notes. Minty, spicy, herbal, well-fermented. Juicy, massively herbal and succulent. Honey, biscuit, rustic grain. Mellow lactic and big Brett notes with pineapple and stone fruit. Lingering juicy herb and band aid.

500mL bottled July 2022. Drunk 11/25/23. Clear, straw blonde. White head steadily to ring. Well that's a nose. That is probably the purest expression of fir tips I'll ever smell in a beer. Good mixed culture character, dare I say some fermented balsam? It's powerful, clear and beautifully done. Flavor is well integrated balsam with a strong maltiness and good attenuation. Minty almost with earth, biscuit, light honey. Mellow lactic acidity. Just impeccable. Balanced.
