Description
Cellarmaker Brewing Company has been in the works for quite some time. Look for our beers to start making their way around better known beer bars and beer focused restaurants in San Francisco starting in September.

We have a tasting room in the same building as the brewery and will offer tasters, pints, and growlers. Some beers may be bottled further down the line but for now it's all draft. The only way you can take our beer away is in the form of a growler - which by the way, is a great way to drink beer!

Look for a focus of plenty of hoppy beers, belgian-style saisons, dark beers, and sour beers. We are huge fans of wine and bourbon barrel aged beers as well so it's only natural for us to have a barrel program. Think bourbon barrels loaded with big chewy imperial stouts, excessively hopped IPAs, fruited sour beers, and funky saisons. This is what we love. This is what we are all about. We hope you are too!

Please follow along for the ride as we build San Francisco's next great brewery.
Cheers!

Can shared. Clear yellow golden color, medium sized white head that diminishes fairly quickly. Aroma and flavor are lightly malts, hops, grassy hops, oily a bit, dank. Okay, full on dank, not enough resinous piney notes imo.

From Beer Drop, canned October 27th 2025.

It pours black with a fine head of tan foam. Very good lacing and retention.

The smell is big coffee, roasted malt, some cocoa. Bitter overall. Some smoke comes through.

The taste is coffee, roasted malt, cocoa, smoke is a nice addition. Tasty son of a gun.

Medium bodied with medium carbonation, I would drink this again.

Poured from a 16 oz can dated November 11, 2025.
Aroma is hop forward with lots of citrus and dank, oily, pine resin. Lighter notes of passion fruit, grapefruit and tropical citrus. Light cracker malt notes and light alcohol notes.
Pours a slightly hazy, pale, yellow gold with a large, thick, frothy white head that recedes steadily to the edges where it lingers in clumps.
Flavor is somewhat sweet with a light cracker malt notes. Medium high bitterness and light alcohol notes. Fairly strong citrus hop notes with tangerine, mandarin, grapefruit and tropical citrus. Hints of passion fruit, and stone fruit. Lighter dank, oily, pine resin notes.
Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth.
Overall, a solid West Coast IPA although one that's not particularly "West Coast". Balanced hops and malt profile with well hidden alcohol notes.

Medium brown. Aroma shows fruity depth, with a good scotch nose, light peat, fruits. Light fruitiness, solid highland park influence. Well-balanced, the way the big fruitiness plays against the burly whisky and that slight smoke/peat thing comes in at the end. Definitely some cool shit.

375mL bottle, pours a deep dark mahogany/brown with a tiny head. Aroma has plenty of oak, dark dried fruits, some dry toffee, and bready caramel. Flavour is complex, with plenty of slightly smoky whiskey barrels, toffee, dark dried fruits, and bready caramel. Real nice whiskey barrel, with just enough smoke. Excellent.

Can.

A- Dark brown color, dark liquid, light brown head.

A- Roasty, cocoa, earthy, burnt coffee.

F- Roasty, slightly vegetal, earthy, dry, cocoa.

T- Medium body, average texture, average carbonation, roasty finish.

O- Been a want list beer of mine for some time but it didn't live up to the hype. Maybe 10 years ago, but now not so much. It needed more smoke and more coffee. Maybe the imperial version would be better. Not bad but not worth getting excited for.

On nitro at Gourmet Haus. Slight roast and dry. Thinnish mouthfeel lacking a little vibrancy even with the nitro. Nice and easy.
