09/24/21 Description: House microflora, estate herbs. 16oz pint in an imperial glass @Keme. Iced tea color, almost clear, small head. Smells a bit like black licorice & wheat. Taste is very fennel-y. Maybe some tarragon. Citrus. Black tea. House yeast seems uniform across the few brews I tried & gives everything a sharp, varnish-y twang. Carbonation is soft, but consistent. Feels boozier than the listed ABV. Might have two of these.

09/24/21 Description: Dunkel rauchdoppelbock... Glass stein @Keme. Clear, red amber, thin lace. Meaty smoke, without being too heavy. Not bacon, but beef ribs. Taste is beef fat, smokey cereal, dry leaves, charred toast, old fashioned green bitter hops entrails. Soft but consistent carbonation, thin, dry. ABV registers right. Too thin for my kind of Doppelbock. Think smoked brown ale. Okay.

12/04/21 Sat with a pint @ Keme. Pretty, lathered head. Clear, crisp-looking amber body, touch of chill haze. Smell is the already twangy house yeast, can't miss it. Wincing amount of sour mix. Vinegary fruit & pith. More vinegar than pith. Lots of tannins to help out. House funk. Overall flavor is very bold/concentrated, & makes it somewhat difficult to drink in a hurry. Didn't love this. Thin, enamel scraping, well carbed, low-ish alcohol. Liked.

No fancy names for this one. Fresh keg changeover. Slightly hazed, medium gold, frothy. Bit of a footy cheese stink up top, over some weak citrus rind. Sharp pine resin & big aspirin bitterness upfront & lingering. Citrus pith is the second fiddle. Bit of cheese is the third note. I'm told the keg is super young & probably needs a couple more days. Crispy, strong enough, acidy, nicely dry. Good+, depends on how intentional the funk feels.

On tap @Keme, half pour. Nose is basically orange oil. Spirited carbonation, half tang, slight oat sweetness, extra citrusy, lavender, green tea. Slightly soapy, big acid, a small itch but an overall thin body. I think the only thing they did different was add some essential orange oil for some more defined citrus flavor beyond cream of tatar. Refreshing.

12oz dimpled mug at the source. Dark brown amber, a little dull. Honey on toast, burnt sugar, bitter veg. Grassy, bittersweet, lingering bitter pine, mellow honey butter toast, a little steel. Lingering bitters. Full bodied. Not what I expected, but tasty.

2/15/23 - 2.7 Mini 12oz stein at the source. Cloudy, honey orange pour, very active. Smells like a sour mash still going. Tons of Brett character, probably too much. Doughy, sharp, lemon, floral, gum, strong rubber, earthy bitter finish with a wincing bit of soap. Too funky for what it is. 10/16/21 - 4.3 Imperial pint @Keme. Clear, golden amber, fuzzy head. Slow concentrated pours are the norm here & produce some appetizing-looking head. House yeasties produce very similar smells of papaya, orange, rich bread across lots of their brews. Taste is bright, rindy bitterness, super dry, tart, copper, lime, scratchy like lots of crispy chips, easy. ABV feels lower than listed. Very good.

On tap @ the source. 12oz stein. 14k gold, weak head, closer to clear than unfiltered. Scent is hard on grass & sharp white grape. Super soapy flavors. American wheat-ish, less texture, more bite. Bitter soap, lemon, grass clippings, sort of tart. Thin, sharp, lingering aspirin bitterness that's becoming a staple. Very lightweight. Interesting. Very untypical.

12oz pour from the source. White reggae is on break, thank God. Golden, oily, honey-ed color. Some body, but really settled. Smell is boring, toasted white bread. Taste is soft white bread & mild but lingering aspirin bitterness. Mostly dry, very slight white grape, or maybe just very tannic. The house tartness just barely there. Frothy, boozier than expected, moderately drinkable. Solid, if too bitter.

12oz mini stein at the brewery. Dark like coffee with russet highlights. White reggae on the lawn. Drink fast. Smell is lots of charry malt, slight coffe & toffee. Bittersweet, burnt caramel, little bit of charred toast, slight oxidation, tart finish like all there beers, but more like red wine this time. Drinkable, but definitely warming. Don't do this last.
