We are a brewery and taproom located in downtown Cambridge. Our focus is on aroma-packed and flavor-driven beers, with an emphasis on New England IPAs, barrel-aged sours, and special seasonals. We brew a variety of one-off batches that allow us to pursue our various whims, and we don’t shy away from funk, twists on tradition, and unique ingredients.

On tap at the brewery. Pours black. Chili, very dark chocolate, cacao nibs, whisky, vanilla, nutty, mezcal, biscuit, very little sweetness. Bit thin. Decent.

4 pack on Friday night, planed for two but alas too easy drinking. Gold pour touch light and large frothy white head. Nose is grains and honey. Tastes of straw, honey, water cracker, some fruity sweetness. Crisp and touch of pepper.

Brewery draught, 3/2/23. Dark. Little head. Smells like fernet mixed with aperol. Very sweet and liquorish. Yeah that dominates. Soft, malty, woah....way too spicy, herbal, super thinned out. Flavor has more weird aperol in it. Not much chocolate, so much Averno and aperol and other random licorice bitters. Very light body, super dry. I guess this attenuated way too much in barrel which is why there's no bottle release. It's so liqueur-like with heavy floral notes and too much astringency.

CX draught, 3/2/23. Clear amber. Small, white head, immediately to ring. Bready, malty, caramelly nose with a bit of mineral. Juicy strawberry almost, with vanilla, custard and more sourdough. Soft, malty, quite hoppy, with near astringent toast right away. Good base malt behind it, though. Toasted sourdough, strawberry, vanilla. Lots and lots of pretty nice specialty malt character, but, honestly, we want the yeast and water (and hops).

CX tap, 3/2/23. Clear raspberry, pinkish head slowly to cover. Lambic-like nose with dainty, delicate, juicy, authentic raspberry and even lactic and Brett acidity. Super clean, flawless. Juicy, with barley, wheat, vanilla, honey and light Brett and lacto tartness. Right up there with the best American wild ales. Clean, no acetic, excellent fruit character. A bit high on abv, as I'd like to see this character at 6% or less, but well-done, with lingering toasted oak and vanilla.

375 ml bottle thanks to ClarkVV. Aroma has whiskey and soft maple. The Buffalo Trace lasts throughout the sip. Very soft vanilla with just a “trace” of maple. Not overdone. Pretty good!

Bottle pour shared by Clark VV--thanks, Clark! It's cola brown with no sparkle, nice viscosity, thin cap of beige head quickly fading to a ring, no lacing. Aroma is strong whiskey over malt and hint of vanilla and maple--mellows as it sits. Taste is strong roasted malt, whiskey--only vanilla and maple in the finish. Mouthfeel is light-to-medium bodied with smooth texture, soft carbonation and finish as taste. Overall, whiskey is strong and still a bit hot and overwhelms the rest. Could rest more.
