Ellison Brewery + Spirits
Microbrewery
in East Lansing,
Michigan,
United States 🇺🇸
Associated Venue: Ellison Brewery + Spirits
Established in 2015
At the time, Lansing didn’t have a brewery large enough to sell its beer outside of its own taproom. Now, there are breweries all over the map competing for marketshare.
Ellison has made it a mission to experiment. A continual refinement of beer, wine and spirits. Sure, we have the usual suspects, but we’re always looking for new flavors. With over 700 different locations across the great state of Michigan to purchase Ellison product, we’d like to say “people like our stuff”.

Light nuttiness with some burnt sugar notes. Medium bitterness and medium light alcohol notes. Light fig, raisin and prune notes. Mouthfeel is medium full to full bodied with low carbonation. Low astringency and medium low alcohol warmth. Overall, a nice barleywine with great malt notes. Alcohol is present but not overpowering. A fun can.

16 oz. can thanks to Adamchandler. Color is pitch black. Aroma is roast, mild oak, and booze. Flavor is mild cinnamon, weak chocolate, and a healthy about of booze. As it warms spice comes forward. Anise notes. Not easy drink.

Can, undated, shared by AdamC on 10.14.18. Inky maroon, tan head to a ring. Smells like almond liqueur, brown sugar and massive cinnamon. Very, very overdone, puzzling amount of cinnamon. In mouth it's brutalized by cinnamon. Somewhat thin but dryish body. Low roast, kind of tastes like root beer. Not sure what they were going for here. If massively overdone adjunct character, then Bravo. Little/no barrel character. Lingering alcohol and cinnamon.

16 ounce can into snifter; no can dating, 2018 vintage. Pours dense, opaque dark brown/black color with a 1 finger dense dark tan head with good retention, that reduces to a small cap that lingers. Nice spotty soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of big milk/dark chocolate, cocoa, coffee, caramel, hazelnuts, vanilla, toffee, marshmallow, fudge, brownie batter, bourbon, coconut, toasted oak, and dark/brown bread; with light notes of molasses, licorice, dark fruit, smoke, char, and roast/toast/oaky earthiness. Touch of booze in the aromas as it warmed, but not overwhelming. Damn nice aromas with great balance and complexity of dark/roast/bready malt, cocoa, vanilla, hazelnuts, and bourbon barrel notes; with big strength. Taste of huge milk/dark chocolate, cocoa, coffee, caramel, hazelnuts, vanilla, toffee, marshmallow, fudge, brownie batter, bourbon, coconut, toasted oak, and dark/brown bread; with light notes of molasses, licorice, dark fruit, smoke, char, and roast/toast/oaky earthiness. Light herbal/roast/char bitterness and bourbon/oak spiciness on the finish. Lingering notes of milk/dark chocolate, cocoa, coffee, caramel, hazelnuts, vanilla, toffee, marshmallow, fudge, brownie batter, bourbon, coconut, toasted oak, dark/brown bread, light molasses/dark fruit/smoke/char, and roast/toast/oaky earthiness on the finish for a while. Amazing complexity, robustness, and balance of dark/roast/bready malt, cocoa, vanilla, hazelnuts, and bourbon barrel flavors; with a nice roasted bitter/sweet and bourbon/oak spiciness balance; with no cloying, acrid, astringent flavors after the finish. Lightly increasing dryness from lingering hop/roast bitterness and bourbon/oak spiciness. Light-medium carbonation and very full body; with a very smooth, creamy, silky, and velvety mouthfeel that is amazing. Light slickness, sticky hops, chalky roast, and oak tannins. Lightly increasing warmth of 14.5%, with mild lingering barrel booze after the finish. Overall this is an amazing barrel aged flavored imperial stout! All around incredible complexity, robustness, and balance of dark/roast/bready malt, cocoa, vanilla, hazelnuts, and bourbon barrel flavors; very smooth and dangerously easy to sip on for the huge ABV. Amazingly rich dessert malt complexity, and balanced flavorings; with perfect barrel integration. Not overly boozy, tannic, or drying. This tasted like BBA fudge brownies in a glass. Pretty much identical to Gravity Shift, but with added hazelnut flavors with the cocoa/vanilla. A highly enjoyable offering, and amazing dessert style imperial stout.

Slightly increasing dryness from lingering bitterness. Medium carbonation and medium-plus body; with a very smooth, creamy/bready, and slightly sticky mouthfeel that is fantastic. Minimal warming alcohol for 7%. Overall this is a fantastic NEIPA! All around outstanding complexity, robustness, and balance of citrus/fruity/tropical hops and bready malt flavors; very smooth and refreshing to drink with the minimally bitter/drying finish. Amazingly soft feel. Spot on Amarillo, Mosaic, Citra profile as expected.
