Tentaka Sake Brewery is a small sake brewery in the countryside, surrounded by rice fields. Located in a rural area blessed with abundant crops, it was natural for a local sake brewer to want to "make sake with local rice." This is how they began working with local farmers to make organic sake.
Our goal was to create safer, more reliable sake, but as we deepened our thoughts about organics, our feelings for the local community grew stronger. We felt that starting with organic sake brewing and expanding organic farming would not only reduce the burden on the environment, but would also broaden the possibilities for organic produce and organic food, leading to the vitality and revitalization of the local community. Tentaka Brewery hopes to play a central role in creating a sustainable business system and increasing the value of the entire region. "Organic" is just one way of doing things, but we will continue to focus our efforts on creating a business cycle that brings joy to everyone.

Bottle, 300ml. A clear one, oily, still and headless. The aroma is alcoholic, fruity, ricey and a bit vegetal, with green apple and grass. Oily, full bodied and warming with mostly fruity, vegetal and grassy flavors. A bit rough, but sure decent. 240622

Clear.
Nose is fairly umami with some salinity and light coconut. Drier notes of biscuit and light fruit with no alcohol noted.
Soft, moderately sweet, biscuit, banana-coconut and salty umami. Light alcohol dryness and lingering honey. I like it more than Ernest did.

Sake flight at Now & Zen, Charlottesville. Clear. Nose is floral, rice, light fruitiness. Flavor is floral, rice, vanilla, lightly fruity. Not bad.

Glass at work dinner. Light yellow tone to sake. Nose is earthy and faint melon. Tastes of grass, umami, honey dew, leaf litter. Crisp and some bitterness

Many thanks to Erzengel for sharing! A clear slighlty yellowish colourless Sake. Aroma of strong mid sweet yellow fruits, rice, mellow. Taste of dry and mild sweet mellow, rice, riped fruits, dry boozy finish. Good!

Fantastic fruity nose with grapes, fresh clean fruit and almonds. Very deep. The Sake starts very dry and clean. Lots of fruit and dry rice. Very deep and still clear crisp. Long fruity depth, very dry and clean and highly drinkable with hints of alcohol in the back.

Clear crystial water colour with no head. Aroma is moderate to light heavy rice, fruity, alcohol, pineapple notes. Flavour is moderate sweet with a average to long duration, rice. Body is medium, texture is oily to watery, carbonation is flat, finish feel is light alcoholic. [20120421]

bottle at home ... clear viscous ... soft light raw alcohol ... soft mellow rice nose... light rough alcohol front ... almost spicy ... but mostly just quite a lot of alcohol... almost raki (so maybe hints of aniseed in there)

Second Sake of the night at the Indra - Cider, Sake and Mead tasting 8/31/07. Pour is nearly clear water. Perhaps a twinge of yellow, but really hard to distinguish from water. Aroma of powerful rice alcohol much more forward than previous Sake Aroma I have experienced. Some banana fruitiness in the flavor, though mostly over powered by the alcohol.
