Description
Around the middle of the Meiji period (1868-1912), Yizuisuishin was born by unifying more than 20 different kinds of sake. The traditional Hiroshima sake, "dry and sweet", has been enjoyed by many customers to this day. The characteristic of Yizushin is that it can be enjoyed throughout the four seasons because of its taste and smoothness. It is also crisp and dry, making it an excellent match for food.

300ml bottle from Sake Shop, Stanmore. Clear with very pale yellow tint, no head and aroma of rice, flowery, fruit, melon, citrus. Taste is sweetish, rice, fruity, zingy, citrusy, with some warming earthy alcohol. Medium bodied, low carbonation, drying warm boozy finish. Nicely drinkable.

Room temperature, poured from a 1.8 liter bottle. Yellow to tan tint to the sake. Rich fruit and rice aroma with peaches. Flavors of rice, koji, banana; yeasty with slight funkiness. Rather light body for a junmai. Decent and rather interesting.
