From my sake backlog. Small cup from Vinmonopolet. Clear pale golden without any head. Aroma is quite average for typical Junmai sake. Smooth rice, slightly citric fruity, hint of melon and moderate yeast impression. Taste in the same direction, soft and smooth rice, a bit of citric fruit, hint of melon and grapes, umami, not much yeast and some alcohol. Balanced body with moderate aftertaste. Decent and food friendly sake.

Bottle at Ante, Newtown. Clear pale golden colour, no head and aroma of rice, sourish fruit. Taste is rice, unami, soured, mushroom & wood hints, some acidity and booze. Medium bodied, low carbonation, drying woody boozy finish. Quite drinkable.

Bottle pour at Bungalow. Oily and clear. Creamy, fruity rice nose, with touches of vanilla and caramel. Rich, fresh, spicy flavor, apples, oranges, some alcohol heat. Clearly nama. Very fresh and tasty.

Glass at Wachi. This is bottled and then aged 5 years at the brewery, then released as a koshu. Aged, funky nose, rice, some caramel. Deep greenish-yellow color. Oxidized flavor, rich caramel, vanilla. Very nice.

720 ml bottle poured into a paper cup. Yellow color, with a funky rice and koji nose. Yamahai or kimoto for sure. Lightly funky and sour flavor, though a bit light. Enjoyable.

300 ml bottle from Yamaya. Not the “Bambi Cup.” Nice spicy nose of rice and koji. Pepper, flowers. Slightly yellowish, a bit icy. Somewhat funky flavor at first, rice, peppery, koji, dust, a bit of warm sweetness but a dry, fiery finish. Decent, light, clean, not all that super flavorful but good enough.

300 ml bottle from Yamaya. Clear, shiny, a bit oily. Fruity nose, sweet orange, peach, melon, spices, dust. Rich, ricey flavor, slightly dusty and peppery, esters and citrus fruits. Dry finish. Quite nice. Dry but full body.

300 ml bottle. Rich rice nose, lightly fruity, very clean and straightforward junmai aroma. Clear, colorless, slightly shiny and oily.
Rich, sweet rice and koji flavor, peaches, melon, light spice. Mellow sweetness followed by some alcohol and pepper. Oily and rounded. Very nice.
A solid nama junmai.

Glass at Wachi. Pronounced yellow tint, a bit oily looking. Aroma of rice, caramel, mizuame rice cany. Flavor of rich and full grains, rice, caramel, rather sweet but not overly so, with strong alcohol and a bit of funk. Very nice.

Glass at Wachi. Slightly yellow tint, oily, shiny. Fragrant floral aroma of rice, some citrus, berries. Flavors of white peach, melon, pepper, citrus, wild strawberry. Light acidity and a touch of late alcohol balance it, though the alcohol is barely noticeable for a genshu. Super smooth and silky. Amazingly delicious.
