AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.
ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

Sample during "Farm Fest 2025 (Friday VIP)" on 07/04/2025. Pours black with some brown around the edges, and a thin light beige head that diminishes quickly to an outer ring. Sparse strings of lace. Aroma of oak, rum, malt and chocolate. Full-bodied with an oaky rum character and notes of chocolate malt and fruit. The finish oaky with a rum and malt aftertaste. Good beer all around.
Poured a clear gold. Breaf and toasted notes. Minor hops. Pretty good kolsch.

Draught and Asheville North Carolina. Ckear gold pour, grass buttery pilz and such and so on.
Cloudy yellow pour from can white head. Funky yeasty aroma. Wine grapes. Pretty useful

From tap at BeerTemple, Amsterdam. Aroma is peachy and tart with Chardonnay impressions, medium sour, light grain, bread, stone fruits, some apricot. Body is medium. Light sweetish, wine, good!

From tap at BeerTemple, Amsterdam. Aroma is tart lemon with grainy malt, mild to medium sour flavour. Light bitterness, light to medium body. Not very complex, but pleasant.

Bottle. Poured a hazy pinkish color with a small light white head. Aroma was nice raspberries, tart, light acid. Flavor was light jammy raspberries, acidic. Really nice stuff.

375ml bottle pours a murky grapefruit color with a ring of white head. Nose has a ton of raspberry, jammy, some sourness, vinegar. Flavor has plenty of raspberry, even jammy, then big acid and malt. Full bodied, high acid.

Tart Raspberry and a little lemon. Hazy pink pour without much head. Tangy finish. Nice balance. Bottle.
