PROGRESSIVELY OLD SCHOOL
We make craft beer with a throwback approach. Through a combination of time-tested brewing/blending methods and modern practices, we create beer that is complex, thought-provoking, and above all delicious.

AN ALE PROJECT
We focus on truly slow beer – mainly Farmhouse Ales and Saisons in our wild brewery and lagers on our clean production side – with a passion for experimenting with other wild and traditional styles from Imperial Stouts to IPAs to Dutch Kuits.

ROOTED IN FAMILY
The name Birds Fly South is a nod to founders Lindsay and Shawn Johnson. For the last 22+ years, they lived the Coast Guard life, migrating across the country. Their family, their flock, was always looking to find their back to the south. Once they landed in Greenville, Shawn’s final station, they knew they had found home.

Stupid plastic pint cup @the source. Sorta hazy, lemon honey pour, lingering froth. Sharp, honey, bittergreen, veggy. Lemon, honey wax, herby, old wood, veg, lime peel astringency, wheat, faint oxidation, lingering bitter lettuce, nutty spent finish. Tart, frothy, boozy, leather. Okay to good. Could be better if they gave me a glass.

Opaque peachy yellow color with a musty, horse blanket aroma. Slightly sweet and fruity to start with a quick turn to mild-moderate citrus peel acidic sour taste. Finishes with a bitter funky taste.

Copper color, thick tan head that lasts. Sweet floral malty aroma. Complex taste of malt, caramel sweetness, earthy or floral hop bitterness. Dry alcohol finish.

16 oz. can from Total Wine. Pours a pitch black color with a small light brown head and decent retention. Very little lacing. Dark chocolate and roasted malt aroma. Very dark roasted, charred malt flavor with a semi-dry finish. Very smooth and clean. Medium-light body. Low bitterness and low carbonation too. Well done.

This beer has almost everything I really love, especially that nice barnyard bretty funk featured primarily in the nose. It brings with it floral element, mild citric hops provide an appealing complement. The upfront flavors are in the same vein with a mild tartness to the funk. So where does it go wrong? After the initial funk at first sip, the back half of this just disappears. There's a mild bready/doughy/yeasty malt presence but it fades into a dry finish with little bitterness, or little anything really almost a watery mouthfeel. This promises greatness and delivers on its good.

10 oz. pour at Southbound. Pours an unclear, ruby color, with a medium, frothy, tan head. The aroma is maple, caraway, wet grass, toasted oak, apple, and cardamom. Sweet and malty, with a musty, creamy bitterness. Heavy body, grainy, a bit boozy, and crisp. Complex and delicious.

Canned, in Asheville. Hazy orange with medium white head. Yeasty, some fruity notes, stone fruit, grapes, brett. Somewhat tart.

Canned, 473 ml. Nice brown colour with yellowish head. Malty, caramel, toasted, sweetish. Tad empty in finish. Soft texture. Medium bodied.

Snallygaster 2022. Poured a clear dark yellow color with a small wispy head. Aroma was pleasant lemon notes, with peach. Flavor was light grain, with a tasty peachy finish. Refreshing.
