On 24 January 2018 Michelle Shipman of Offbeat Brewery in Crewe put the brewery up for sale. Tom’s Tap and Brewhouse was born on 13 June 2018 when Michelle Shipman, Sean Ayling and Jacqui Ayling became the new owners of the brewery.

[ As Tom's Green Hop ].
ABV: 4.7%. Clear light yellow colour with a small, fizzy, fair lacing, mostly diminishing, off-white head. Aroma is moderate malty, sweet malt, pale malt, bread. Flavor is moderate sweet with a average duration, pale malt, sweet malt, bread. Body is medium, texture is oily to watery, carbonation is soft to flat. [20191010]

Cask at Smithfield, Derby. Pours almost black with a small beige head. The aroma is mainly roasted malts with some nutty hints. In the mouth it is slightly sweet with a smooth creamy texture. There’s a veritable scramble of flavours. Roasted malts just about come out on top, closely followed by oats, caramel and alcoholic strength. But there are hidden depths too, revealing chocolate, spice and porridge. Some bitterness in the dry finish. This is a beer which pulls no punches – awesome !!

Keg @ Tom's Tap & Brewhouse, Crewe. Black with a small off-white creamy head. Steady stout, not quite worthy of the mighty tag. Crisp and smooth keg pour. Bushy-floral notes.

Gravity Cask at Gadds Ramsgate, Thanet Easter Brewery Tour Beer Festival '24, 30/03/24. Almost clear golden to light amber with a white cap that heads edgewards. Nose is straw, dusty hops, hedgerow, faint citric essence. Taste comprises light citric tinged straw, grass, grains, herb, hedgerow, stewed fruits. Medium bodied, moderate carbonation, semi drying close spattered with modest dusty hop bitterness. Okay.

Keg @ Tom's Tap & Brewhouse, Crewe. Hazed orange-gold with next to no head. Has smoked elements with its wit style coming to the fore in its aftertaste. Understated before this.

On tap at Toms Tap, Crewe. Pours a golden amber with a sizeable almost white head and good lacing. There’s continental hops in the aroma, plus bready malts and hints of yeast. In the mouth it is sweet and malty with medium carbonation. Quite juicy with flavours of barley sugar, apricot, and a hint of hops. Some fruitiness in the finish. This is decent – the only difference from a genuine Kolsch is that it isn’t bland enough !!

On tap at Toms Tap, Crewe. Pours almost black with minimal beige head. There’s plenty of coffee and some honey in the aroma. In the mouth there’s a brief glimpse of sweetness before bitterness of roasted malts comes through strongly. Followed (in more or less this order) by alcoholic strength, coffee and ginger. Some hints of lactose and caramel too. Finish is dry and viscous. This is rather nice – one for sipping slowly though !

Keg @ Tom's Tap & Brewhouse, Crewe. Golden with a small head. Mild kölsch style at best, nothing too exciting here, although I've never been a fan of Kölsch anyhow. Chewing gum evident.

Keg at Tom's Tap, Crewe, 26/01/24. Light black with a tan cap that thins edgewards. Nose is chocolate, nutty, dark malts, light roast. Taste comprises earthy fruit rinds, walnut, cocoa powder, light charr, lactic tang. Medium bodied, fine carbonation, semi drying close. Passable offering ... a touch disjointed and not detecting any coffee.
