On 24 January 2018 Michelle Shipman of Offbeat Brewery in Crewe put the brewery up for sale. Tom’s Tap and Brewhouse was born on 13 June 2018 when Michelle Shipman, Sean Ayling and Jacqui Ayling became the new owners of the brewery.

Cask at Crewe Dog, Crewe. Pours a murky apricot with a small almost white head and good lacing. There’s malts and stone fruits in the aroma, plus traces of floral hops. In the mouth it starts off slightly sweet with a distinctly chewy texture. Floral hops and dried fruits in the flavour. Later of some bitterness becomes evident as does orange peel and dried apricots, Bitterness lasts into the finish. This is reasonable.

Keg at Durham Brewery 30th Year Anniversary Beer Festival. Murky gold colour, white foam head and aroma of fruit, citrus. Taste is sweetish, pale malt, zesty, fruity, citrus, hop, with drying bitterness. Medium bodied, soft carbonation, dry zingy bitter finish. Nicely drinkable.

19/7/2024. Cask at the 2024 Chelmsford Summer Beer & Cider Festival. Pours hazy yellow gold with a small bubbly white head. Aroma is grassy, citrus, orange, malt, straw, light herb. Moderate sweetness, bitterness and body. Soft carbonation. Refresher.

Cask at Chelmsfaasarhd Beer Fest. Near clear deep amber brown beer, small bubbly pale tan head. Airy palate, semi dry, reasonable fine carbonation. Smooth thin dark malts, a decent amount of slightly tangy and fruity dark chocolate. Mild earthy coffee. Ripe fruity and semi dry finish. Pretty drinkable.

Keg @ Tom's Tap, Crewe. Hazy pale golden with a head. Light hoppy but with a heavy tasting white chocolate aftertaste. Really good.

Keg @ Tom's Tap & Brewhouse, Crewe. Black with an off-white creamy head. Good mild style with a very full body given its strength. Some roasted, and a hint of toasted too.
