Description
I was originally an arable farmer but diversified into cider making back in 2011 when someone wrote to me asking if I had any apple trees, as they would like to buy the fruit to make into juice. I decided to plant some trees for them. While I was planning the new orchard, the thought occurred to me to try making make my own cider. So I visited the West of England and took some advice from cider makers down there.

I tried out my first batch of cider on a home-made press using apples from neighbouring gardens and from the roadside … admittedly not the best but I had got the bug. So my new orchard was planted with a blend of cider apples and dessert fruit – a blend I still use to this day. The business has continued to grow since then, and I use apples from our own orchards as well as others from Northamptonshire and Herefordshire farmers.

Saxby’s ethos is to produce high quality, authentic cider using fruit from English trees embracing both traditional and modern techniques, for a flavour that can be enjoyed by everyone. Cider doesn’t have to be a large production line drink. Neither does it have to be bland or too niche for the masses.

NB - Whilst the postal Town is Wellingborough (Northants) the cidery is located across the county border in the village of Farndish (Bedfordshire).

Gravity dispense at the Real Ale Classroom, Stoneygate, Leicester. Reddish purple, flat. Not so much plum in the aroma: the nose is almost pure sour apple. There is however a good dollop of sweet/sour plum in the taste with a welcome dryness in the long finish. Surprisingly delicious.

29/3/2018. Bag in box at the 29th Egham Beer Festival at the EUSC. Poured clear yellow gold with a small bubbly white head. Aroma of caramel, apple and light oak. Moderate sweetness, light sour. Moderate body, slight oily and watery texture, very soft carbonation. Quite dry, and crisp finish. Nice.

5.8% Bag in a box at Firkin Alehouse Folkestone. Clear pale yellow colour no head. Some dryness. Some apple juice. Some chardonnay melon thing. Some juiciness on the finish. Wine vinous. White grape. Light sour finish

500ml bottle @ Cherry Red's, Birmingham. Pours a deep reddish amber. Aroma has some plummy sweet hints. Taste is slick, moderately sweet, some plummy sweetness, not overbearing, but lightly sticky. Pleasant fruit cider.

Bottle from Blue Glass, Bedford. Pours pale gold with no head and short lasting visible carbonation. Aroma of apple, sweetener, and very light mulled spice notes. Medium to heavy sweetness, light tart sourness. Medium body, oily texture, average carbonation.
