Description
As a fencing contractor I would see apples rotting on the ground in so many gardens, in 2012 I borrowed a small basket press and scratter and had my first go at making cider. What I ended up with was about 100 litres of cider that was dry and sharp but tasted really good. I was so impressed that I bought my own slightly larger press and scratter and did it again in 2013 this time making 200 litres.

In May 2014 I took a sample to Cambridge Beer Festival for the Cider Bar Manager to try, he said "If you can make cider like that, we'll sell it here next year" and Simon's Cider was born.

Made in a typical East Anglian style, Simon’s cider is slightly cloudy. It has a sharp initial taste that “makes your ears laugh” and a fruity finish. It is wonderfully refreshing on its own but even better with a pork pie!

The main driving force has always been to use fruit that would otherwise be wasted and we've stuck to that ethos. We maintain 4 small orchards and have access to 2 others, we take excess apples from peoples gardens and swap them for cider, and to top up we buy graded out apples from local orchards and help them clear out the cold stores at the end of their year. The majority of the apples we use are eating and cooking apples and we also buy in a small percentage of proper cider apples from selected West Country orchards.

3/12/2021. BIAB sample courtesy of SHIG. Pours clear very pale gold with no head. Aroma is tangy, sweet, funky, touch of solvent. Medium plus sweetness, light bitterness, moderate tart. Moderate body, oily texture, low carbonation. Nice tangy finish. Enjoyed this.

Sample courtesy of SHIG, cheers Shawn! Golden colour, some short-lived bubbles on top and aroma of fleshy apple, solventy funk. Taste is sharp, tart, sourish, fruity apple, some vanilla hints, with vinegary funk notes and citric acidity. Medium bodied, low carbonation, dry acidic finish. Quite drinkable.

BIAB at Norwich Beer Fest: Poured a golden with a white head. Aroma is funky cheese, apple, musty, funky. Taste citrus, apple, tannin.

ABV: 6.2%. Cloudy light yellow colour with a small small - virtually none head. Aroma is moderate apple - pear, sweet pear, tart, dough, wood, earthy, light funk. Flavor is moderate sweet with a average duration, pear, sweet pear, tart, light earthy - woody. Body is medium, texture is watery, carbonation is flat. [20181019]

ABV: 6.2%. Cloudy - havy matt light yellow colour with virtually no head. Aroma is moderate pear, wood, earthy, acetone, light horse blanket. Flavor is moderate sweet with a average duration, pear, pear - apple, sweet apple - pear, acetone, wood - woody. Body is medium, texture is oily to watery, carbonation is flat. [20181019]

Taste is sweetish, fleshy apple, alittle solventy funk, some tartness, and light biscuit hints. Medium bodied, low carbonation, medium-dry finish. Quite drinkable.

17/01/2020. From Bag In A Box at the 11th Elysian Winter Beer Festival. Pours clear quite pale yellow gold with minimal head. Aroma of sweet apples, fruity, slightly rubbery, touch funky and citrusy. Medium plus sweetness, very light tartness. Medium body, oily texture, soft to flat carbonation. Quite enjoyed this.
