Maybe you’re chasing the new or craving the familiar, perhaps you just want to kick back for a drink with friends—and order another of the same. At Bearded Iris, our beers meet you where you are and deliver the experience you seek, whatever it might be, because that’s what we believe makes beer worth drinking. CULTIVATE VARIETY DRIVES US AT BIBCO. (WE’RE NOT KIDDING.) With a menu that skews heavily toward IPAs, DIPAs, and pales, it can appear that we don’t, in fact, cultivate much “variety.” But here’s the thing: we’re not looking to bombard you with a checklist of styles. Instead, we know that each hop varietal and every intentionally selected ingredient contains a multitude of possibilities that can be deliberately unlocked and unleashed, then honed and hemmed in tightly, to construct a pint that’s unapologetically itself, memorably composed, and fun to drink. Every time. Regardless of style. To us, that’s the variety worth cultivating. And that’s what we bring to your table.

Draft at the source. Pours a thick, cloudy violet purple and magenta with a finger of pink head that dissipates quickly. Crushed raspberry purée, dank hops and raspberry skin aromas. Raspberry throughout the palate, flesh and skin. Not sweet, light bitterness. This is a really great use of fruit by BI, but maybe a touch too much astringency in the finish. Draft at the source. Pours a pitch black with a finger of brown head that lingers. Quite thick and viscous looking in the cup. Coffee, roasted cacao nib aromas with faint maple notes. Creamy smooth texture on the palate, oat texture there. Roasty finish, soy sauce. Maple was there on the nose, but the soy sauce and roasted malt, was a little overpowering towards the end.

Bright, juicy explosion of hops, a heady mix of kiwi, white grape, peach, and berry with mustard undertones and a dry floral note meshed with pine. Fizzles out towards the back, fading into a mild, bready finish with lingering traces of citric hop and a modest bitterness. White bread aroma seems odd, but the pour comes out a nice hazed yellow with a brief white head and modest lace. Texture's a tad astringent but oily and full. Not the best from B.I., but enjoyable.

Can, shared round at Jeff’s. Fully opaque, dark yellow. Messy film of white. Nose has really juicy, pulped ripe citrus. Definitely a nelson twang. Soft vanilla malts. Taste is mostly sweet, with a light, savoury, spicy character. Fairly soft and juicy mouthfeel. Low carbonation. Light citric bitterness with a little more of the savoury thing to finish.

Pours a slightly hazy, neon yellow, with smallish head. Aroma has tropical fruit and citrus notes, with some sour washcloth. Flavor is tropical and citrus fruit, with some soapiness, some pine/spruce hops. Finish is rather bitter. It's not too bad.

Ummmm...so what the hell is this? Pours a purpleish-lavender color with no head. Aroma of berries, pine/spruce hops. Flavor is berries, with some sourness, and a touch of pine/spruce hops. It really isn't a very compelling mixture of flavors. Interesting, but I'd have to say it's a failed experiment.

Another good IPA from Bearded Iris, full of peaches, pine, berries, passion fruit, lemon and mild vegetal notes. Cracker malts could use a little beefing up, as could the bitterness on the back end, but otherwise a nice pint. Huge peach and grapefruit nose makes for a nice opening. Pour's good, hazy yellow-gold with a brief white head and modest lace. Texture seems unexpectedly harsh, well-carbonated but slightly astringent. Tasty.

Can thanks to Blake. Pours golden with medium frothy white head leaving spotty lacing. The aroma is pine and citrus. Medium body, juicy, grapefruit, melon, resin finish, good.

Draft at the source. Pours a cloudy lavender with a finger of eggshell colored foam that lingers. Big citrus forward hops on the nose with peach undertones. Blueberry skin as it warms. Creamy, milkshake-like texture. Still very beer like on the palate even with the lactose. Not sweet at all. Nice bitterness, with blueberry skin as it warms up. Medium bitterness on the finish.

Feel like a broken record when it comes to a lot of these B.I. brews: three-fourths of an IPA, with a huge fruit-forward hop presence on the front and a bland, featureless fade. Plenty of goodness in between, with lemon, grapefruit, peach, berry, and bubblegum notes all sitting atop a gentle toasted-bread malt base. Enjoyable, except for a complete lack of any hop bitterness or discernible hop notes on the finish, with a fade made mostly of lingering citrus memories. Pours a uber-hazed yellow-gold with a persistent white head and tons of lacing. Fruit salad aroma's a nice touch. Creamy, soft feel is a tad undercarbonated. Not bad, but there's plenty of other IPAs with the same hop profile that come off as a complete beer.
