Picture yourself eating a handful of red raspberries, drinking a glass of fresh squeezed lemonade, or sipping on a glass of fine wine. Those sour, tart, and acidic flavors you are currently imagining are what makes sour beer taste quite different from traditional beers. These flavors, which are unique to sour beers, are the product of time and the right mix of microorganisms. While our sour beers age in oak barrels for an average of one year, a blend of microorganisms will shape the sour, tart, and acidic flavors that weโ€™ve come to desire. Yes, sour beers take an exceptionally long time to develop, but we think that sour beers are well worth the wait.

On tap at the brewery. Aroma has a medium apricot note with some great hop notes that add tropical fruit, melon and a bit of a spicy herbal note. Medium light citrus and acidity. Pours a hazy, golden orange with a meidum small, white head of moderate thickness and retention. Medium light lacing and small legs. Flavor is moderately acidic with a fairly strong apricot character and some light citrus notes. Some low bitterness and light oak notes. Medium light tropical fruit and citrus hop notes with a bit of lemon and herbal spice. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, this is a super beer that works really well. The hops really compliment and accentuate the apricot notes. The oak and acidity adds nice character. One of the best beers from this brewery.

Bottle shared. Pours very hazy light orange with a small white head. Aroma of tart apricot, light funk, oak, vinous notes and lactic notes. Flavour is light sweet and light moderate sour, really soft in the mouthfeel with a little lactic burn in the finish. Medium bodied with soft carbonation.

CBC Green Session queue. Bottle. Hazy pale gold beer, small pale cream colour head. Palate is light and semi dry. Decent fine carbonation. Mild sourness. Obvious tinned pineapple. Light citric hop finish. Tasty enough.

Growler shared by Eric at Capitol Beer in Sacramento, CA. Pours amber gold with a slight white head. Aroma of delicious coffee. Med + body. Flavor is sour, a bit citric, very coffee, malty. Seems to get a vanilla note with time. A very smooth, sour extremely tasty coffee sour. Finishes like having had a green coffee bean in the mouth. Done well indeed.

750ml bottle pours a murky yellow with some soft, white head. Nose has a lot of lime and ginger, some straw, some wood, a little buttery oak, some white grape, lemongrass. Flavor has more of the ginger, but itโ€™s not biting or harsh, lemongrass, straw, lime, white grape, mild hints of vanilla, some yogurt. Medium bodied, refreshing finish. Very nice.

Bottle at the DC Expanded Sour Tasting. Poured a dark ruby red, brown color with a small white head. Aroma was heavy cherry, some balasamic vinegar, oak, some woody vanilla notes. Bottle at the DC Expanded Sour Tasting. Dark amber with sediment, beige head. Aromas of light oak, cherries. Tastes of cherries, dark fruit, vinegar. Medium body with a dry finish.

On tap at the brewery. Aroma has a medium acidity with quite a bit of tropical fruit, mostly pineapple and some stone fruit, mostly peach and nectarines. Low pear character. Light oak notes. Moderate citrus notes. Pours a slightly hazy, golden orange with a small thin white head that quickly recedes to the edges where it lingers for a bit. Medium light lacing and no legs. Flavor is fairly acidic with a medium light oak note with light oak tannins. Medium light tropical and stone fruit. Medium citrus notes. Low bitterness. Faint mustiness. Only light acidity in the finish. Mouthfeel is medium bodied with medium carbonation. Low astringency and low alcohol warmth. Overall, a pretty decent sour with nice fruit character. A bit more complex of a yeast profile than I am used to getting from RB sours.
