Founded in 2010, Stillwater is an original nomadic beer project that utilizes the traditional brewery as if it were a studio - a place where beer becomes a canvas for creation, collaboration, and experimentation. For it’s founder Brian Strumke, nomadic brewing isn’t simply a job title. It’s a way to tell stories, engage with the world at large, and move through it on his terms.

In 2011, Strumke woke one morning to find himself anointed as one of the top new brewers in the world by Ratebeer.com - a proclamation that would change the trajectory of his life forever. Over the last 10 years, he built and scaled Stillwater® into an international business, capturing broad attention with it’s multidisciplinary approach and award-winning products crafted worldwide.

Formerly known as Stillwater Artisanal. Brian is from Baltimore, MD but has relocated to Seattle. Stillwater was tied to the Brooklyn, NY scene and importer / brewery Twelve Percent. Beers have been brewed at various breweries, but with many coming out of Twelve Percent's North Haven, CT brewery. Now Brian has brought Stillwater to the state of Washington and set down roots. Stillwater beers are brewed at Talking Cedar as of late 2023/early 2024.

A dozen years after pioneering the “nomadic brewing” model, Stillwater® has planted roots in the Pacific Northwest. For the first time, all production of its inventive and style-bending beers is concentrated at one location under founder Brian Strumke’s oversight and control: Grand Mound, Washington’s Talking Cedar. Opened by the Chehalis Tribal Enterprises in 2020, Talking Cedar is a 35,000-square-foot complex that houses a state-of-the-art brewery with a 60-barrel brew house, rows of 120-barrel fermenters, and multiple oak foedres.

Keg at BrewDoge Camden, 21/06/24. Murky yellow to orange with a big old just off white head. Nose is sweet edged, perfume, pineapple, grass. Taste comprises melon, mixed tropical fruits, herb, soft malts, floral edge. Medium bodied, fine carbonation, semi drying close splashed with mellow hop bitterness. Passable IPA ... overly sweet and perfumed.

On tap at Bottleworks, pours jet black with a small dark brown head. Aroma is rich, dominated by a decadent combo of bourbon and sherry barrels, followed by molasses, dark sugars, and some roast. Flavour is very rich and quite sweet, with intense sherry barrels and dark sugars upfront, with the bourbon creeping in secondarily, along with molasses and dark dried fruits. It's a bit too sweet for me, but there's a remarkable complexity to this, in no small part due to the double barrel. Wonderful.

355ml can. Pours an opaque black with a small, creamy, short lived, brown head that laces. Semi-sweet aroma of roasted malt, molasses, dark chocolate, earth and coffee. Sweet flavour of roasted malt, licorice, molasses, brown sugar, vanilla, prune, dark chocolate and a hint of smoke in a warming booze finish. Full body with a thick, sticky, creamy, smooth, oily texture and soft carbonation. Complex and tasty.

Smell of coffee, roasted malt. Black colour, dark brown head. Aroma of vanilla, coffee, roasted malt, faint rye bread. Soft plentiful carbon. Medium sweet, lightly bitter. Pleasant.

Can at home, 30/04/24. Clear golden with a good sized lasting just off white head. Nose is mellow citric zest, candied orange peel, citric tinged straw, subtle yeast esters, grass, herb. Taste comprises bitter orange, light mineral bite, herb, hedgerow, modest yeast esters, straw. Medium bodied, fine carbonation, drying close spattered with earthy hop bitterness. Not bad.

Keg at Brewdog Shepherds Bush, London. A murky golden/orange coloured pour with a decent off white head on top. Hoppy, orange, grassy, bitter tropical fruit taste/aroma. Decent enough IPA but not really standing out in any way.

Hazy yellow beer, white head. Smells of banana and spice. Flavour is the same. Banana, cloves, bread, a little zestiness. Dry, fruity finish.

07/24/19 Tall boy from Covenhoven. Pint glass. Cloudy orange lemon, active, heady body. Smells of lemon oil, sour mix & very soft florals. Taste is dominant with wildflower honey upfront & a tart lemon twang middle turning acidic & full sour on the finish. Frothy, medium bodied, strong carbonation. A significant amount of honey in this. Tasty.
