Founded in 2010, Stillwater is an original nomadic beer project that utilizes the traditional brewery as if it were a studio - a place where beer becomes a canvas for creation, collaboration, and experimentation. For it’s founder Brian Strumke, nomadic brewing isn’t simply a job title. It’s a way to tell stories, engage with the world at large, and move through it on his terms.
In 2011, Strumke woke one morning to find himself anointed as one of the top new brewers in the world by Ratebeer.com - a proclamation that would change the trajectory of his life forever. Over the last 10 years, he built and scaled Stillwater® into an international business, capturing broad attention with it’s multidisciplinary approach and award-winning products crafted worldwide.
Formerly known as Stillwater Artisanal. Brian is from Baltimore, MD but has relocated to Seattle. Stillwater was tied to the Brooklyn, NY scene and importer / brewery Twelve Percent. Beers have been brewed at various breweries, but with many coming out of Twelve Percent's North Haven, CT brewery. Now Brian has brought Stillwater to the state of Washington and set down roots. Stillwater beers are brewed at Talking Cedar as of late 2023/early 2024.
A dozen years after pioneering the “nomadic brewing” model, Stillwater® has planted roots in the Pacific Northwest. For the first time, all production of its inventive and style-bending beers is concentrated at one location under founder Brian Strumke’s oversight and control: Grand Mound, Washington’s Talking Cedar. Opened by the Chehalis Tribal Enterprises in 2020, Talking Cedar is a 35,000-square-foot complex that houses a state-of-the-art brewery with a 60-barrel brew house, rows of 120-barrel fermenters, and multiple oak foedres.

ACBF. Cloudy gold beer, residual white head. Light soft dry palate. Fresh herbs, lemony citrus, whsiper of mint. Unusual! Dry finish. Good!

ACBF. Hazy brown beer. Little tan head. Light sofytpalate. Sweetish dry malt with light sourness. Bubblegum and a whsiper of spice. Very Belgian! Semi dry finish. Alright.

Tap @ Ørsted Ølbar. Pours unclear golden with a creamy lasting white head. Nose is belgium yeast and fruit. Flavor adds a bit of pepper and hints of fruity tartness. Medium bodied. Ends dry.

Bottle, 75cl, at Patricks. An unclear, golden orange beer with a small, white head. Lovely aroma with lots of fruits, banana, melon, peaches, overripe apples and some mango. Malty sugars and a touch of alcohol blends in. Grapefruity hops. The flavor is very close to the aroma. More focused on the hops, a pleasant bitterness going on, and slightly yeasty. Full body, sort of oily and rather smooth. Lasting finish with enough bitterness to balance it. A pleasant American style saison I hope to have again. 110407

Darkbrown cloudy beer, beige creamy dense head, very stable and adhesive. Aroma: very intense and complex! There's caramel, dried fruits, liquorice, overripe strawberries, citrussy hops, alcohol, pineapple, lots of stuff. MF: ok carbon, full body. Taste: liquorice and spices, sweet caramel, mocha, pineapples (the hops), ripe fruits, alcohol present in the back of the throat but still very well hidden. Ripe banana's, nutty, chocolate. It just won't stop. Aftertaste: sour berries, gentle hops, milk chocolate and sweet pineapple. This is really amazing beer. And of course it's all sold out now. :(

0.75l bottle @ Henrik, Bergen shared with ClubGonzo. This pours a deep brown near black body with a small tanned head. Really nice aroma with strong licorice, hops, yeast, leafs and a acidic note that wraps it all together. The body has a really slick, sick and silky smooth texture that completely vanishes (vaporizes *poff* it's gone) two seconds after hitting the tongue without me having anything to say in the matter. The first self-swallowing beer I've had. The carbonation is soft. Taste is first coffee and some licorice combined with a dry-fruitiness and a faint alcohol-note hidden in the texture. Slightly sweet (not like a school girl but the other way). Then it changes personality and goes more sour and yeasty (this time more like a school girl) combined with a herbal white-sage finish. Quite different and strange, and especially that freaky body made this a interesting experience.

Slightly sugary flavor, but with enough bitterness, fruits and pale malts to make it balanced. Some cellary hints as well. A really nice American style saison. 110331

Bottle, 75cl, at Patricks. A nice two-finger white head sits on top of an unclear golden-orange body. The aroma is flowey with a good dash of fields of flowers. White sugar and tropical fruits and a cellar touch too. The flavor is pretty much the same, not as flowery, but equally sugary. Full-bodied and nicely carbonated. A nice saison in the American way. 110331
