Maplewood opened with the mission to push liquid boundaries in an unassuming building nestled in Chicago’s historic Logan Square neighborhood.
The first of its kind to establish brewing and distilling roots under a single roof, Maplewood has been producing finely crafted beer and spirits out of their 10BBL brewhouse and 250L Kothe hybrid still since 2014. Three years after moving into the production facility, Maplewood opened the Lounge, a neighborhood bar doubling as a cocktail parlor and brewery taproom. Beginning commercial distribution throughout Illinois shortly after settling into the Logan Square space, Maplewood has since expanded their distribution footprint into Missouri, SW Michigan, Northern Indiana, Wisconsin and Kansas. Maplewood’s patrons have come to expect expertly crafted beer in a wide range of styles.

16oz can c/o Ryan. 3+ months out from canning, the aroma and flavor have faded some. Resinous, clean, but the aroma is not that enjoyable anymore, kind of that green onion tone. Does drink like a West Coast IPA in most respects. I'm sure it is better fresh.

Back to a light lager look, things ring off foam. Basic lager nose. Closest to a base blonde ale taste. Coffee coffee palate is kind of vegetal, like green coffee beans, but also a kind of jalapeno pepper. I find that enjoyable. And one of the servers agreed that it was kind of spicy.
Served during this coffee and beer pairing with Folklore Coffee Roasters Cold Brew, topped with a Toasted Marshmallow Cold Foam.

16oz c/o Ryan. Canned 3 months ago, this one is starting to turn. Bright, nice bitterness, the hops are just faded, oxidized. Lemony edge. Not in the best condition, but OK.

16 oz. can from Trader Joe's. Starts with a foamy pour. Settles to a light, hazy straw color. Yes, a lovely smell of POG fruit juice, as I remember from when these tropical beers were a thing. The juice notes are right up there on the palate. Tartness is kind of incongruous. I'd have liked it to keep more of that tropical juice sweetness.

Cloudy golden yellow with small head and moderate effervescence. Banana, orange, clove, wheat malt, and straw aroma. Moderately sweet banana, orange, clove, wheat malt, and mildly bitter straw flavor. Good body.

Not bad, offering up a modest note of caramel and cracker with a touch of tropical fruit, with a good bit of grapefruit and citrus pith on the back end and a shitload of piney bitterness. Solid pint.

I appreciate the restraint on the lactose--too often milk stout equates to Tootsie Roll--but never really develops a soul of its own. The roasted notes are very subdued, the texture's pretty light and sparkly for a stout, and the finish lacks much of a presence at all.
