In 1996 the first 2 beers were on tap at Lambrate brewpub, there were 3 owners and the brewhouse capacity was 150 litres per batch and the pub was opened few days a week. Today there are 5 owners and a considerable staff, plenty of beers are produced and the brewhouse capacity is increasing from 2000 litres to 4000 litres per batch. Alessandra, Fabio, Paolo, Davide and Giampaolo: everyone has a specific role in the company as administrators, head chefs, publicans, headbrewers.
Making craft beer is a time consuming but exciting process, which requires knowledge, passion, care and creativity. Everything is based on a constant research and selection of quality raw materials, then the brewers decide which beer will be produced in terms of style, taste, colour, abv, etc. After the recipe is designed, the brewing process can start. Malt is milled and it’s mixed with water in a process called “mash”. Next step is “lautering” and then “boiling”. Afterwards wort is cooled and moved to fermentation tanks where yeast is added. After 4-6 weeks beer is ready to be kegged or bottled. Every single process is under brewers control, supported by our chemical analysis laboratory. Currently our brewery can produce more than 4000 litres per day.

Tap at Birra, Berlin. Quickie before running to catch the tram to catch the train to catch the bus to Prague. EZ! Pitch black body, off-white head. Creamy bourbon-barrel driven aroma, vanilla, wood, some coconut. Smooth, sweet taste, coconut and honey mostly, the barrel having said plenty, but the maltiness pops up as well. Good stuff!

Tap ar Birra Berlin. Clearish golden body, off-white head. Low resin, low earthy notes in the subdued aroma. Subdued taste, resin and dank, clean maltiness, medium bitterness, bigger carbonation, drinkable, I see what they were doing there, but the hop profile isn't enticing enough.

Tap at De Cervesia Pub, Lucca, Italy. Pours dark brown, with scarce brown foam. Aroma is intense of chocolate powder, plus cinnamon. Body is only partially dense, with moderate carbonation. Taste is medium sweet, with also a nice roastiness. Final is still intense, though not much persistent.

Al naso l'aroma rimanda al fruttato. La finezza olfattiva è elevata e il modo in cui permane è sufficiente. Il cappello di schiuma resiste abbastanza. La grandezza delle bollicine è medio-fine. Il liquido appare velato. Il colore è giallo dorato brillante. Il corpo è strutturato. L'amaro è intenso. La forza gustativa è elevata e la durata è buona. Le sensazioni boccali finali risultano luppolate. Il retrogusto è intenso. Al gusto vengono donati toni di miele, cracker, crosta di pane, frutta secca, resina, pino, agrumi, pompelmo, ananas, arancia amara, mandarino, mango, frutto della passione, frutta tropicale e uva spina.
