Description
In 1996 the first 2 beers were on tap at Lambrate brewpub, there were 3 owners and the brewhouse capacity was 150 litres per batch and the pub was opened few days a week. Today there are 5 owners and a considerable staff, plenty of beers are produced and the brewhouse capacity is increasing from 2000 litres to 4000 litres per batch. Alessandra, Fabio, Paolo, Davide and Giampaolo: everyone has a specific role in the company as administrators, head chefs, publicans, headbrewers.

Making craft beer is a time consuming but exciting process, which requires knowledge, passion, care and creativity. Everything is based on a constant research and selection of quality raw materials, then the brewers decide which beer will be produced in terms of style, taste, colour, abv, etc. After the recipe is designed, the brewing process can start. Malt is milled and it’s mixed with water in a process called “mash”. Next step is “lautering” and then “boiling”. Afterwards wort is cooled and moved to fermentation tanks where yeast is added. After 4-6 weeks beer is ready to be kegged or bottled. Every single process is under brewers control, supported by our chemical analysis laboratory. Currently our brewery can produce more than 4000 litres per day.

Thanks to the brewer for sharing. Pours black with a small tan head. Aroma: brown sugar, vanilla, light coffee beans and some oak barrels. Taste: plenty of brown sugar and coffee cake. It owns his name, Tiramisú all the way.

Tap at De Cervesia Pub, Lucca, Italy. Pours dark brown, with scarce brown foam. Aroma is intense of chocolate powder, plus cinnamon. Body is only partially dense, with moderate carbonation. Taste is medium sweet, with also a nice roastiness. Final is still intense, though not much persistent.

Al naso l'aroma rimanda al fruttato. La finezza olfattiva è elevata e il modo in cui permane è sufficiente. Il cappello di schiuma resiste abbastanza. La grandezza delle bollicine è medio-fine. Il liquido appare velato. Il colore è giallo dorato brillante. Il corpo è strutturato. L'amaro è intenso. La forza gustativa è elevata e la durata è buona. Le sensazioni boccali finali risultano luppolate. Il retrogusto è intenso. Al gusto vengono donati toni di miele, cracker, crosta di pane, frutta secca, resina, pino, agrumi, pompelmo, ananas, arancia amara, mandarino, mango, frutto della passione, frutta tropicale e uva spina.

Un arco olfattivo dominato dall'orzo tostato. La finezza olfattiva è normale e il modo in cui permane è sufficiente. Il manto birroso superiore resiste abbastanza. La grandezza delle bollicine è medio-fine. Il piano sottostante si presenta velato. Il colore è ramato. Il corpo è pieno. L'amaro è intenso. La forza gustativa è elevata e la permanenza è buona. Il gusto è piacevole. Le sensazioni boccali finali risultano di birra beverina. Il retrogusto è di decente intensità. Sul tetto della bocca si depositano impressioni di caramello, miele, cracker, frutta secca, agrumi e arancia rossa.

A slightly deep/dark amber with a medium sized, quite dense white head that shows good enough persistence and lacing. Average to slightly below average intensity in the aroma: a sweet foudation (mainly caramelly) with some fruitiness and spiciness on top of it. As for fruitiness, it's mainly candied orange; as for spiciness, can't pick something specific (maybe ginger?). Anyways, though far from unpleasant, the aroma is neither too rich or well defined. Slightly better in taste: flavours still don't feel too defined or intense, but the beer finds a good overall balance, with a bit of sweet edge in taste and a balanced, fairly dry per style finish. Taste notes as per aroma, maybe a hint of herbal hops in finish/aftertaste. Not too dense bodied for the abv, with average to above average carbonation (more or less standard carbo for a tripel, which loosely is what this beer is); feels overall like a pretty easy drinker for the style. Okay on the overall, but far from impressive.
