Chocolate Cake nose under the tab. Pours brown to black with a huge fizzy head that swiftly falls away. Taste has what was promised: chocolate, vanilla, and yes, strawberry. At some point it tastes like strawberry lipstick. Nice note of alcohol that needs no aging or wood to bring out. Cozy dessert flavor ahead of any that's been on a barrel.

Full Belgian Dubbel nose: bubblegum, a bit of spice, and of course cherry. Amber body is just a bit cloudy, thin ring of foam. Taste has equal parts Dubbel and sweet cherries. Very nice.

Sampled as a vertical with the 2024. Decided to finish this off since I can still get another 2025. An identical brown-to-black beer under a fizzy tan head. The more recent beer's head fizzes away pretty quickly. Nose starts with mostly stout roasted malts, not much bourbon or wood to it. The fact that they don't describe any specific bourbons whose barrels were used suggests only that they wanted to source as many as they could to make their production. It's very fizzy, with some brusque malts and extra sweetness, all things that will likely fade over time. As a "fresh" BBA stout, it's still rough around the edges, but then I don';t to many of these this "young."

Packaged Oct. 20. Piney and resiny hop bitterness right on the nose. Pouring reveals a very cloudy gold beer, and kicks up an additional pineapple smell past its sudsy head. Tasting is, or course, full of exotic hop taste: resiny and there's that pineapple juice. And somehow, there's a "bite" as it passes my tongue and into my throat.
I think I'd need to sample several Hip Butcher IPAs at once so I can get to know its house style and its variations.

Canned 2 weeks ago. Brown porter pour under a thick tan head. Nice milk chocolate nose. Taste has cocoa and coffee notes. Hard fizziness. Light alcohol. A solid dark lager.

2007 bottle. Cork pops with no gusher; a good start. Deep brown beer color under a thin layer of foam. Smell is slightly subdued, but after a few sniffs, there's the toasty malt, a bit of candi sugar and just a sniff of fruit esters. No faults with the taste, just strong malt in a molasses roast. Mouthfeel is just a little thinner than expected. Hugely enjoyable for an 18 year old bottle.
