There were a lot of balls in play. And heavy lifting. You see, in relatively short order, Bruery Terreux had become quite robust, especially since the buildout and launch on April 22, 2015. We had amassed a substantial amount of filled barrels, from seasonal releases, one-time treats and cherished smaller batch experiments. The art of the blend beckoned, and we had our pick of the litter (or would that be herd?) For such a mysterious beer that became known around the office as Juggling Walruses, Tart of Darkness was the perfect place to begin, making up the highest percentage of contributing barrels. But it wasn’t just Tart of Darkness as you’ve come to know it. About two-thirds of the barrels were wine barrel-aged Tart of Darkness; and the other third of the oak barrels from the sour stout were particularly young. Black currants were added to all these barrels, introducing a less familiar fruit to our lineup, with a darker hue and new nuances to the sour beer flavor profile.

When blended with the other oak barrel and bourbon barrel-aged beers that were carefully selected for this blend, Juggling Walruses exhibits dark fruits, roast and char on the nose, with vinous notes and oaky characteristics weaving through flavors reminiscent of midnight foraging for berries in the forest. The mystery, though now revealed, remains dark at present, and will continue to brighten and evolve over time, as the high alcohol, slow-building acidity and subtle fruit character fold into the malt base and mouthfeel.

Bottle. Pours murky chestnut, small beige head, some lacing. Aroma is acetic, vinous, cherries, varnish, leather, tobacco. Flavor is medium tart, light plus funk, just a touch of cherry, loads of leather and tobacco notes. Fullish body and silky mouthfeel. Decent.

The usual large head and good retention with high clarity in the body; no one ever says that Bruery beers don’t look appealing...Deep mahogany with violet/magenta hues and a khaki colored head.
Strong souring acids in the nose mix with dark, acidic currants that provide strong black pepper-like notes as well. Lots of skin tannin and moderate oak, as well. Surprsingly not too alcoholic, though some heat is present. Caramel-toffee notes back the acids and provide an ok balance, to be fair. Vanilla, wood and caramel slowly give way to a fruity, acetic and lactic acid finish.
Moderately to strongly sour in the mouth, with high, fairly engaging carbonation, lots of caramel-toffee malt and tannic, acidic, but fairly enjoyable currants. Again, this could be a LOT boozier than it is for its size, and it’s not a sugar bomb. Oak, vanilla, earth, and lactic acid linger on the finish, with light currants peppering the palate as well.

750 ml bottle, thanks Adam. Color is a murky brownish color topped with a small white bubbly head. Nose is weak currant sweetness, mild bourbon hints, but kind of odd.

Taste is more currants, with a strange mix of bourbon and odd sourness. More like a sour stout or sour brown. Not palateable for me.

Bought two. Saving one for our tasting group. Split two ways. Stored upright for a month. Dark brown to black, 2 finger coffee head faded to nothing. It smells like a total sour bomb. Overwhelming flavor is tobacco. Cigarettes followed by cinnamon, wood and currants. It’s insanely sour, juicy and tart.

750ml bottle pours a muddy brown with some creamy, rose colored head. Nose has wood pulp and acid, mild berry, mild pomegranate. Flavor is tart with acid and berries, apple cider vinegar, wood pulp. Tart finish. Solid.

750ml bottle at the July DC tasting. Poured a cloudy brown color with a small tan head. Aroma was light caramel roasted notes. Light tart notes. Pleasant tart brown ale.

750 ml bottle I brought to the Local DC Tasting. Dark brown with light tan head. Aromas of vinegar, dark fruit, tart notes. Tastes of vinegar, dark fruit, grapes, tart acidic notes. Medium body with a dry finish.
