Chef Tio and I designed this beer together through a running series of texts while planning a beer dinner we would hold at her place in Kansas City.
Wandering conversations detailing layers of flavors flew fast and jumbled through the ethersphere.
I think we will become great friends – I wrote.
And we did.
She came to Dexter and we brewed this beer together.
Laurie jokes and now insists Celina and I must be long lost brother and sister.

750ml bottle. Pours out a hazy wheat color topped with a sand head. nose is great nice sour barnyard funk lemon barrel spice and some brett maybe. Taste is more of the lemon citrus funky barnyard some dust and a nice spice. This one is great.

Poured from a bottle courtesy of kippah. Aroma is fruity with pineapple, mango and other tropical fruit. Some nice spice notes with an obvious tamarind character. A bit of citrus with lemon and orange. Light malt notes with cracker and bread. Pours a hazy, bright, yellow gold with a small, moderately thick white head that recedes quickly to a thin film that lingers. Light lacing and small legs. Flavor has a light acidity with some light lemon and orange notes. Light pineapple and medium light mango. Moderate tamarind character. Medium bitterness. Some light cracker and bread notes. Mouthfeel is medium light bodied with medium carbonation. A bit watery. Low astringency and low alcohol warmth. Overall, an alright beer. I liked the aroma, but the mouthfeel and flavor came up a bit lacking. Tamarind was an interesting addition and worked well in aroma and flavor, though more so in aroma.

Cloudy blond color, small head. Nice aroma, there is some lemon, apricot; sour. Dry, lean mouthfeel; it has 2 dominant characteristics, lemon and wood cask; medium sour, not much bitterness.
Nice, enough flavor, not very complex.

Bottle: Cloudy, yellow/brown with a thin white head. Sour fruit, wet wood aroma. Taste is slightly musty....citrus, mango/lemon. A nice bit of basement funk. Really tasty...nicely tart.

GABF 2015. One of the better beers of the night. cloudy orange color, completely opaque actually. A lot going on, citrus; spice; maybe some grains of paradise, grapefruit. There is yeast that makes it lightly sour and some brett I think that makes it a little bit earthy. Great beer.

Bottle. Musty mango, biscuit malt, and straw aroma. Hazy pale yellow with small head. Sweet citrus, wood, malt, musty yeast, and mildly bitter hay flavor. Nice body.

Hazy, pale, white-gold appearance is topped by a small but persistent white head.
Floral and perfumey nose does not belie any mango nor would I ever guess tamarind. So that’s good. It does come off peppery, with some very minor, dry pineapple, guava and limeskin notes from the brett. Little/no malt influence in the nose with some woodiness from the oak and lots of lactic acid lingering on the finish. All told, it’s incredibly perfumey/woody and full of light, fruity notes and the oakiness isn’t here obnoxious, which is always a worry with JP. No alcohol or flaws.
Bizarre flavors of sage/lavender, mint jelly, pearskin, lemon, unripened mango and lime-like brett. Oaky sourness apparent but not obnoxious, as in the nose, with a very strong carbonation further lightening things. I guess the tamarind is the culprit for all of these strange, hard-to-put-my-finger-on flavors and while at first I’m a bit put-off, with warming and breathing it’s hard to not like the restraint shown on both barrel and sourness here. It comes off as too light, undermalted and overcarbonated at first, but the guava/mango/pineapple flavors creep in as well as a perfect amount of tartness keeping the beer complex and interesting but still preserving its levity and high drinkability.
Is this a 3.7 or is this a subtle masterpiece along the 4.7 lines?

Capped 750 from The Davis Beer Shoppe. Pours hazy gold with a white head. Aroma seems to be fruity Brett. Which seems to turn to pedio. Med body or so. Slightly citrus sour, slightly pedio, maybe a hint of Brett, some tropical fruitiness, maybe wood and/or rye spice. Rather mild in one sense, but rather strongly flavored in another. Nice drink.

Bottle, I finally talked to Ron more than 3 words and he recommended that of the three beers at Culmination Fest to try it. It poured a hazy yellow with white head. The aroma was oaky and tropical fruit. Taste was a tart fruity mainly citrus with some spice, finish was a bit dry.
