"It has the colour of onion skin", said a voice behind me.
It was Raymond Coumans.
He was admiring the colour of the raspberry lambic reflecting in the red copper of the buckets used to empty the barrels. At that time (1986), "Raspberry-Lambic" already was synonymous with a sweet, artificially flavoured beer. This is why we decided to distinguish our beer from the other raspberry beers. Raymond proposed to call it a rosé, dedicated not to Bacchus but to Gambrinus.
The process to make this beer is identical to the one to make Kriek. When young, the Rosé de Gambrinus will still present its full fruity taste. Later on, the lambic taste will become dominant at the expense of the fruit taste.

One year old bottle at Mon Petit Cafe. Pretty clear red pink, tart fruity, light barn, citric, berries. Sparkling medium light body, lovely dry fruity, high drinkability, fresh, clean, lovely nightcap.

LCI. Light raspberry, classic funk. This will age well as they do, but there’s a nice brightness at this age.

It’s high-time I give this one a rerate, it’s crazy how long ago I last rated it. Shared a 750mL with my girlfriend and her uncle. Oddly enough, my previous rating, from so long ago, isn’t too bad for one of my first ratings . This is still my least favorite Cantillon (still love it) and in general I think raspberries go least well with lambics. Too much heavy, poignant acidity and dryness with less complexity than even cherries offer. Granted, this was way too young. At only 5 months old, the raspberries, while certainly flavorful, were just too forceful. You can taste the individual raspberry flavor and acids and it both stands apart from and masks the lambic character. Other than that, same delicious sulfury goodness, with a perfect mouthfeel/texture/body that you find in so few other breweries. I’d much rather trade off some fruit flavor to have this a little more homogenous and with more apparent lambic character from aging.

Rose, slightly orange pour with a stable white head. Aroma is malt, vinegar, rasberries. Taste is tart rasberry, cereal/mal, vinegar, some citrus, apple and a hint of cream. Very nice.

Bottle. Not had in a while. Nose is rich funk, wheat, pastry, raspberry, strawberry, hint of vanilla, faint green apple, faintest hint of cheese. Taste is tart raspberry, leading to vanilla, lots and lots of brett, pastry, green apple, raspberry and strawberry, yogurt, lemon juice and green apple. Bone dry finish.

2023 bottle at home. Ruby pour with a pinkish off-white head. Nose is raspberry, floral notes of rose, citric acidity. Taste is tart, jammy berries, some floral character, dry, tannic acidity, surprisingly clean. Light, fizzy, refreshing. Solid, but nothing extraordinary, funny it took so long to finally try it.

a nice lambic, cantillon doesn’t really make anything that isn’t nice. Nice sourness, nose is of lemon, and citrus, and very tart. overall good, but not spectacular

Aroma of tart fruits, raspberries, sour cherries, barnyard funk, oak. Flavour is quite sour and tart, raspberry, with a dry and lasting pungent sour finish. This is how I like my fruit Lambic: Not this artificial sweetish junk, but rather the real deal. Cantillon, you rock my beer world.

Bottiglia. All'olfatto si esprimono sentori di frutti di bosco. La finezza olfattiva è elevata e il modo in cui permane è apprezzabile. Il manto birroso superiore è caratterizzato da una schiuma che resiste poco. La grandezza delle bollicine è medio-fine. Il liquido è di consistenza limpida. Il colore è rosso squillante. Il corpo è rotondo. L'amaro è nella media e c'è anche una componente moderatamente acidula. La forza gustativa è elevata e la durata è buona. Il gusto è piacevole. Le sensazioni boccali finali risultano di birra beverina. Il retrogusto è intenso. L'aroma in bocca porta i segni di miele, agrumi, lampone, frutti a bacca rossa, arancia rossa, mandarino e sour in secondo piano.
