Our second beer for the rainbow project
Ideas flew back and forth across the equator centered around the colour Blue: using e numbers, icebergs, berries, potatoes, even a dye used in brewing which turns your pee blue (sadly poisonous...)! But in the end we went far more abstract and took the classic French black & blue steak as our inspiration.
Thus was born Black and Blue – a raw ale, un-hopped and un-boiled, fermented and aged in re-toasted bourbon casks for an extra charred flavour alongside brisk acidity from fermentation with our house cultures in barrels for over 6 months.
Every good steak needs a sauce to go with it so we introduced white, green and black peppercorns into the mash to accompany our raw ale.

Level 42 Bottleshare. Hazy gold beer, a few pale cream colour bubbles. Light malts. Mildly tangy - sour fruits with a little sherbet. Lemon and orange with a lemony sherbetty finish. Simple but nice.

Bottle at home. From Siren’s International Project box. Smoky sour basement aroma - not particularly enticing. Bright amber. The head retreats to the rim of the glass. Yep, it’s sour. Some umami in there too. Light bodied. Thin and very fizzy. Extremely refreshing. However my lips are now stinging.

Bottle at home, 28th December 16. Pours Amber, aroma is vineous, barrel. Taste is tart, complex, interesting, sour, barrel, very enjoyable.

330ml bottle. Aroma is tart balsamic vinegar, lots of pepper and toast. Bit of white wine too. Flavour is a little too savoury. Tight fizzy palate. Very interesting and quite nice too.

Appearance: Hazy dark golden colour with an off-white head.
Aroma: Citrus, fruit, sour.
Body: Medium body and carbonaiton.
Flavour: Citrus, sour, fruit, tart, a bit acidic.

Bottle shared in London - team effort. Pours lightly hazy yellow-gold with a creamy, white head. The nose holds lemon, light sweaty vinegar, hints of grass. Light sweet flavour with sturdy acetic twang, more lemons, sweat, melon, wheat, pale wood. Light bodied with fine to average carbonation. Quenching finish, with good lemony acidity, more pale wood, straw. Tasty, refreshing.

Bottle shared on Level 42 14/11/2016. A hazed golden orange coloured pour with a halo of white head. Aroma is woody citrus, grapefruit, ginger, woody, little vinegar. Flavour is composed tangy vinegar, sour lemon, spicy. Citrus, spicy ginger. Palate is sour, acidic, frothy, abrasive carbonation, lemon rind. I like it.

Bottle at level 42. It pours hazy golden with a small white head. The aroma is fresh, sour, lactic, lemony, Granny Smith apple, sherbet, vanilla and wood. The taste is crisp, tart, good mouth - pucker, lemon sherbet, bright acidity, peppery and straw with a firmly dry finish. Medium body and moderately foamy carbonation. Fresh, tart and quaffable.

Bottle split at L42, thanks to the team, 14/11/16. Light golden orange with a moderate off white covering. Nose is pissy citrics, spice, straw, vinegar strokes, damp cloth, balsa, funk, barnyard. Taste comprises pissy vinegars, lemon rind, straw, funk, wood must, farmyard. Medium bodied, fine carbonation, semi drying close with a tarte acidic calling. Ok sour but not the most balanced from the genre.
