Our second beer for the rainbow project
Ideas flew back and forth across the equator centered around the colour Blue: using e numbers, icebergs, berries, potatoes, even a dye used in brewing which turns your pee blue (sadly poisonous...)! But in the end we went far more abstract and took the classic French black & blue steak as our inspiration.
Thus was born Black and Blue – a raw ale, un-hopped and un-boiled, fermented and aged in re-toasted bourbon casks for an extra charred flavour alongside brisk acidity from fermentation with our house cultures in barrels for over 6 months.
Every good steak needs a sauce to go with it so we introduced white, green and black peppercorns into the mash to accompany our raw ale.

Sample at All In Beer Fest 2016. Hazy golden with white head. Very tart and acidic with aroma and taste of gooseberry, lemon, light pepper and wood. Highly tart.

From tap. Pours hazy orange with a quickly disappearing head. Aroma is citric to slight acetone. Light fruity. Dry sourish to wooden. Dry, citric, acetone, fruity. Slight earthy, wooden. Lingering dry citric far finish. Acetone sourness is overempowering to the peppers.

330ml bottle from Hoptimism online. Hazy golden colour, white foam head leaving alittle lacing and sour citric & funky aroma. Taste is sour, grainy, slick citrus rind tang, fruity, lactic, with funky yeast plus some peppery & salty notes. Light to medium bodied, soft carbonation, slick & sour at the finish. Quite drinkable. With the New Zealand connection was thinking this might have been named after the Bats song "The Black & The Blue".

On tap @ What’s Brewing, Stavanger. Pours hazy golden, with a creamy head. Aroma is bretty fruity notes, sour candy, and light lactic notes. Medium body, with soft carbonation. Flavour is tart, with berries, and bretty wood, as well as white wine grapes. Lingering tart berry notes.

Bottle from Beer Gonzo webshop, Earlsdon, Coventry, part of a Rainbow Project box. Consumed at home cooking Lamb Shanks with tomato, chilli and honey and a Canellini bean mash Sunday 16th October. Murky gold, not too much of head it must have departed swiftly. Tart berries in the mouth with a little peppery zip, twangy, really twangy a light diluted balsamic edge. It’s fine but you’ve got to be drinking this in the height of summer or when you are in the mood, I’m only partly in the mood. A6 A3 T6 P3 Ov13 3.1

Bottle shared with Ashton McCobb. Pours hazy golden orange with a thin white head. Aromas of vanilla, sour funk, wood, custard. Taste is surprisingly sweet up front, pink custard with sour lemon sprinkles. Faint bourbon at back. Another interesting collab.

Bottle thanks to allmyvinyl. Appearance - Nose - lots of funk and wood. Almost varnish. Taste - pink custard and grapefruit and brine. Palate - close to medium bodied with a creamy yet tangy texture and a long dry tangy finish. Overall - really interesting.

330ml bottle via Honest Brew. Pours hazy amber, white head. Big floral aroma. Taste is floral, parma violets, geraniums, marzipan with a good crisp sour edge. Just a bit too floral for me with a little too much sweet-shop sweetness.
