Our first step into barrel-ageing and the relationship between wood and beer. For this imperial stout we've taken the coffee and cocoa base beer and split it between port and bourbon barrels to see what both fortified wine and spirit can bring to beer.

The port barrel brings the heady aromas and heart-warming vapours from a freshly popped bottle of tawny. This beer is perfect for leather armchairs and nights by the fire with a fine cheese. The grapes are present from beginning to end and the beer has taken more flavour from the wood more readily. Charred/caramelised hedgerow fruits elevate the ripeness of this stout making it surprisingly juicy.

Unfined, unfiltered, suitable for vegans.

Bottle at Craft CG share thanks to Dan. It pours jet black with a small tan head. The aroma is toasted coconut, vanilla, wood, bounty bar, whiskey and roasted malt. The taste is slick, juicy, tangy fruits, plum, prune, cocoa, wood, fruit cake, cranberry and warming alcohol through the finish. Full body and fine carbonation. Good fun, the barrel aging definitely comes through.

330ml bottle from Beer Reveolution, Hay-on-Wye. Pours jet black with an ample tan head. Aroma: roasted malts, chocolate, burnt brown sugar, liquorice. Taste: light to moderate sweet, light bitter, dark chocolate, salted caramel, light smoke, hint of coffee, earth, leather, some vanilla notes from the barrel. Medium bodied, ample carbonation, creamy oily mouthfeel, dry light smoky finish. Very nice

Bottle shared at craft beer Co Covent Garden. Thanks to Daniel Osprey for this one. A oily black coloured pour loose tan head. Aroma is sweet, liquorice, brown sugars, burnt milk, custard. Burnt Danish. Palate is semi sweet. Tangy, Flavour is composed of tangy, brown sugars. Green apple, petrol. Pasts is medium full, airy carbonation.. Lingering bitter black mlats.

Bottle split at CBC St Giles, thanks to Danny, 30/05/18. Black with a well presented tan head. Nose is roast malts, spice, nutty, chocolate, toffee. Taste comprises light smoke, charr, chocolate biscuit, dark fruit rinds, sweet malts, faint barrel. Full bodied, fine carbonation, semi drying close with a light boost. Decent enough impy.

Bottle shared in London - cheers to Danny. Pours deep brown with a foamy, beige head. Tangy dark fruits in the aroma, modest roast. Medium sweet flavour, some ashy roast, tangy berries, earth, leather. Medium bodied with fine to average carbonation. Scorched bitter earth finish, baking cocoa, dried leathery berries. Novel.

Bottle picked up from Beer Revolution, Hay on Wye, Powys, Wales, consumed at Mum and Keith's, Kempsey, Worcestershire, Friday 5th January 2018 Pours almost black with a tan head, sticky, oily and with lots of dark brown sugars. The port barrel ageing is wonderful it softens the beer, cocoa, leather, a little spirit shows. Smooth, creamy its a lovely, lovely beer. A7 A4 T9 P4 Ov16 4.1

Opaque dark brown beer, good tan head. Smooth palate, fairly dry, decent fine carbonation. The dark malts are smooth and semi dry. Mild tang and a little dark chocolate. Whisper of coffee. Mellow bitterness. Port barrel brings a trace of vanilla and modest red berries. Tangy finish. Could be smoother but overall it's pretty good.
