Foeder 97 - 2 year old Lambic from tap at Koelschip, Copenhagen. Aroma is bretty, plenty of barnyard funk, soft sour fruits, citrus, fruity. Flavour is moderate to medium sour with a dry finish. Touch of sweetness. Body is medium. Pretty well-balanced and good funky aromas, easily drinkable, enjoyable Lambic. 3.9 2020 - As 2-year old unblended Lambiek. Straw, funk, malt, some fruits. Nicely sour, not a lot of depth. Refreshing. 3.5

Sampled as 6.5y old lambic at TDG 2024.
Pours clear, darker blonde. Scent is mushroomy, oaky. Taste is woody, mushroomy, mild funk. Surprisingly mellow for it's age. Easy drinkability. Not the slightest sparkle of CO2 left. Nice as an experiment for sure, but I like the outcome as a true drinkable lambic as well !

Draught at Tørst: pours flatish orange with mo head. Aroma is earthy, basement, funky, citrus. Taste is sour, acidic, funky, earthy. A bit fruity. Fine. A little one dimensional.

Novare draught, 8/26/23. Lightly hazy, golden-bronze. No head. Lactic acid up front, mellowed, with earth and very light cheese rind. More sweetness, apparently, than most oude lambiks. Still, it's assertively culture-forward, with big apple and pear and even light spice from somewhere. Huge oak, wow. Soft, juicy, mega cheese rind, apple, pear, unripe white grape. Biscuit, hard wheat, dry. Lingering heavy sulfur and mineral. Despite my loathing for Boon, this is a solid, traditional lambic with excellent Parmesan rind, apple and biscuit. Soft and wheaty with a hint of light carbonation.

0.25l tap, foeder #42 according to the tap menu. Unclear orange with a small head. Intense grapefruit zest, bergamot, fermented hay, vinegar, funk, basement, wood. Dry sourness with some bitterness. Medium bodied, watery texture, low carbonated, dry sour zesty bitter finish. Nice!
