Leo, Teo e Sam sono andati alla ricerca dell’origine della birra, ricreando un’audace ricetta ispirata alle antiche bevande fermentate. Usando ingredienti comuni sulla base dei ritrovamenti archeologici ogni birrificio ha scelto un metodo di fermentazione diverso. A Borgorose, l’Etrusca, l’abbiamo fatta riposare in grandi anfore di terracotta, come quelle ritrovate negli antichi siti etruschi

Using ingredients found on archeological sites (different cereals, hazelnuts, raisins, pomegranate, resins, honey), this project is supervised by Patrick McGovern (university of Pennsylvania).
At Del Borgo the beer is fermenting in clay amphorae.

Sample at Borefts 2016. Poured a hazy medium amber with a thin broken white head. The aroma is dry mineral aspirin light fruit. The flavour is moderate sweet with a floral hop, yeast palate. Medium bodied with average carbonation.

On tap at Borefts Beer Festival, 2016. Pours hazy yellow, small white head. Dried fruit, raisins, malty, honey, sweet, bit vinous and sour. Medium bodied. Bit unusual and different.

Tap@Borefts 2016, Bodegraven - orange amber pour with white head. Sweet malty aroma and taste with some citrus fruity notes, overt sweet honey and caramel, some beetroot notes in the finish.

At Borefts 2016. thnx for sharing,everyone ! Pours unclear blonde. Smell is intense, dry, bitter, plastic. Taste is intense, bitter, plastic, dry, sugary, harsh.

From tap. Pours hazy orange with a small white head. Aroma is toasted malty andslight yeasty. Phenolic. Sweet, toasted, yeasty and slight fruity malty. Medium dry, light fruity and bitter to mild sour finish.

Hazy yellow colour. Aroma has some sweet malt. Flavour has some strange floral notes, fruit and something of a stagnant pond.

On tap at Borefts ’16. Dark golden colour, no real head. Aroma is light fruity, some citrus/grape, lots of mould. Flavour is also wet mould, light fruity, some honey sweetness, some citrus, earth, bittersweet finish. Would never have guessed the 9.3%.

Draft at Borefts 2016, Day 1. Very hazy golden with a white head. Aroma of herbs, malt, urinal cakes and citrus. Flavour is light to moderate sweet and sour. Medium bodied with soft carbonation. [23-09-2016]
