White oak is native to North America and typically contains a higher vanillin content than its European counterpart, which has a strong influence on the flavour of whatever comes into contact with it once it's made into barrels.

Our white oak is air-dried for 24 months before before it's made into casks and then charred to create a natural barrier between the spirit and the very heavy, virgin vanilla flavour that's locked within the grain of the wood. It's only at this point that our beer would come into contact with it either as a cask or as chips in our Oakerators®.

Malt: I & G ale malt, Malted Wheat & Lager Malt
Hops: Super Styrian & Fuggle

Maturations: Over bourbon-infused oak heartwood in our Oakerators®

Finishing Touch: Infused with dried bergamot and blood orange oil to create a fragrant and refreshing finish.

Blond color, clean. The aroma of oak is initially too sweet, it gets more delicate later. Simple ale, clean, lean, with a light bready flavor, the low bitterness means a sweeter result, and it has a balanced oak presence.
Not overly interesting, but it’s fairly well brewed.

12 oz. bottle, pours a clear pale golden with a small white head. Aroma brings out notes of oak, a touch of tea and some bourbon. Flavour is pleasant enough, with light oak and vanilla upfront, followed by some orange and tea. Fairly pleasant flavours, but a thin mouthfeel means this lacks punch. Decent.

Bottle: Poured a clear amber color ale with a nice foamy head with good retention and some lacing. Aroma of bergamot and light spices with sweet wheat malt is intriguing. Taste is a sweet mix of wheat malt, some light char oak with some blood orange and bergamot notes. Body is about average with good carbonation. Too sweet for my liking for interesting combination of unusual ingredients.

Bottle from Total Wine in Sacramento, CA. Pours gold with a slight white head. Aroma of light caramel, mild wood and floral/spicy hop. Med body. Flavor pretty much matches aroma, but despite no claim for such, it seems mildly whisky. I’ve always liked these sub rosa prepared ales, and this is no exception.

330ml bottle into a cut glass tumbler at home on 21st Nov 2015. The first beer in my ’Drinking by Colours’ tasting session with no one else. Very clear for a wheat beer, even if it’s a German style ’Kristall’: this is a bright, clean golden colour, the head a full white covering. Get more Oak than wheat in both the aroma and taste, malty sweetness to the whole thing too. You can scene the alcohol too, strange beer and I am torn between liking it and not.

330ml bottle. Pours dark gold with a medium head. Aroma is orange and spicy wheat. Taste has orange squash to start. Wheaty finish with the signature Innis vanilla aftertaste.

330ml bottle. Pours a clear, pale golden with a large, short lived, white head that laces. Sweet aroma of orange, caramel malt, wheat, vanilla, butter and light oak. Sweet flavour of orange, caramel malt, vanilla, butter, wheat and oak with a light dry, bitter finish. Medium body with a smooth, oily texture and soft carbonation. Ok.
