The Berlin oak is the first variation of our Budike, before raspberry and woodruff. Strictly speaking, a white stored in wood is even the most original form of Berlin's sour beer specialty. Because in the 16th and 17th centuries, when it was created, the wort was boiled in copper kettles, but the beer was then stored and matured in wooden vats and barrels.
We were inspired by this. Our Budike Weisse, which we brew according to the historical model with special yeasts (including Brettanomyces) and lactic acid cultures, ripens first on wood and then in the bottle. We have tried many different woods and toasting grades to find out which flavors work best with the fruity acidity. Her name already suggests it: our white is perfectly balanced by heavily toasted oak. It is all the better that this tree is also native to Berlin - true Berlin refreshment.

Bottle at home in Alkmaar. Pours clear, pale golden with a frothy white head that dissipates instantly. Nose is intensely acidic, fruity, funky, slightly oaky, very pleasant and delicate altogether. Taste is medium sourness, lactic notes, light estery funk, apple skin, pear notes. Closes with a tart, fruity, acidic and dry finish. Light bodied with sparkling carbonation, it’s easy and refreshing. It’s a light, clean and refreshing beer all in all, and it’s also fairly complex, actually more so than expected. Fun.

330ml bottle from Beermoth. Pours cloudy yellow without a head. Aromas & tastes of apple, lemon, Brett, grain, sour & acidic. Medium body. Tart finish. Enjoyable & a pleasant surprise

0.33 l bottle from Biermeisters by Foresters Feine Biere. Shared with Schieder and Fates11 at the subway. Drank from the bottle. Aroma is moderately to intensely yeasty, funky, bretty, acidic, fruity, dark fruit. Light body, soft texture, mild to moderate sourness. Light vinous touch, hits of oak. Dark fruit and dried fruit flavour. Dry finish. Unique.

Appearance: cloudy pale yellow with a small white head of low retention. Aroma and taste: pale malt, lactic acid, funk, bread, oak. Medium sour. Mouth feel: light to medium body, fine carbonation. Summary: highly refreshing.

Spennende øl, men da jeg åpnet og smakte, så var det en tydelig og for meg altfor sterk smak av brent plast, som satte seg i munnen fra litt ut i ettersmaken, og ble sittende. Så det ble siste ølet i kveld. Må være infisert.

330 ml bottle. Milky orange. Wood, lots of wood and oak barrel, lactic acid, rubber, lemon juice, soy sauce. Dry sourness, umami. Medium bodied, milky texture, fizzy carbonated, dry sour woody finish. Really nice!

Murky yellow with a short head. Aroma of salty wheat. Flavour is tart salty apple, grain and lemon salt in the back, long tart Weisse finish.

Bottle from Rewe near Kurfürsterdamm in Berlin. Color: Hazy yellow-ish golden, fast disappearing white head. Aroma: Light tart, wood, floral notes. Taste: Light to moderate tart, very light sweet. Fruity hints of apple and citrus, subtle notes of oak wood. Herbal ans lightly spicy notes, mustard(/?) hints. Some funk and vanilla too. Quite complex for a Berliner Weisse. Under medium body. Just below average carbonation. Nice Berliner Weisse.
