A more challenging cider for the connoisseur. Again, Dabbinett apples feature highly in the blend along with other traditional bitter sweets such as Harry Masters and Ellis bitters. Not so dry as to be unpleasant, just slightly sweeter to ensure a crisp balanced cider where all the flavors really shine through.

Half pint in the Mytton and Mermaid (just outside Shrewsbury) on 26th February 2025. Clear cider, semi dry, tasted of cooking apples.

Cask at the Red Lion pub with seaviews in Cromer. Clear golden cider, quite strong tasting but its dry textured apple is also strong in both aroma and taste with a sweetness attached.

(Cask at Cock Tavern, Hackney, London, 26 May 2022) Pale golden colour with no head. Fruity, sourish nose with notes of yellow apples and grass. Fruity, tart taste with yellow apples, honey, grass, apple peel, a certain tannin harshness and a fresh acidity in the finish. Medium body, with a slight sweetness. Tasty and refreshing. Nice one.

From cask or possibly bag-in-a-box, at The Lyric, near Piccadilly Circus, with Sigmund before going to see Phantom of the Opera at Her Majesty’s Theatre 21.09.22. Clear pale golden. No head. Aroma and taste of red apples, slightly bitter cider apples and apple zest. Good.

Bladder bag at the Smithfield, Derby crawl, 11/02/22. Clear golden with a modest covering. Nose is tangy apple, straw, tannins, wood, grains. Taste comprises orchard wood, herb, apple skin, tannins, bitter sweet. Medium bodied, soft carbonation, drying close. Not bad.

Cask at the sportsman Derby. A very clear golden pale yellow straw coloured pour with no head. Aroma is semi sweet, grass, tangy green apple, bark,. Flavour is composed of semi sweet, woody mealy apple, some white sugars, grass. Palate is still, semi sweet, ok.

BIAB: Poured a golden with bubble head. Aroma is apple, crispy. Taste is pungent apples, metallic, tannins, dry finish.

Cask, half-pint at Pint Shop Cambridge. Shared with Finn. Bright golden body, naked surface, poor lacing. Apple skins on the nose, mid-sweet. Taste of sweet apples, some spices to it. Ends with sweet apples. Just alright. (Cambridge 14.11.2021).

500ml bottle from Top of the Hops, Stockton. Murky orange gold colour, no head and sweet musty apple aroma. Taste is sweet, fleshy apple, mellow fruity, hint of honey, with alittle soft drying tannin. Medium bodied, low carbonation, semi-dry finish. Quite drinkable.
